Lettuce and Tarragon Soup

It was good but not very hearty if you know what I mean. I used spinach instead of lettuce to give it more nutrition. If you have my luck, you'll have green soup splattered all over the kitchen when you use the blender...it's fine with chunks. I put my spinach through the food processor before I added it to the pot.

French Silk Chocolate Pie I

I doubled the recipe as others suggested and it fit perfectly in the graham cracker pie crust. I'm not sure if this was supposed to happen, but the filling ended up having chunks---it looked like I had crushed oreo cookies in it. I noticed this started forming when I put the 3rd egg in. In the end, it tasted smooth with the occasional chocolate chunks which tasted just fine to me and the guests. Yes, I will make this again!

Green Risotto with Fava Beans

Excellent! I was a bit hesitant to try, but I'm happy I did! I used 1/2 cup brown rice instead of risotto because that's what I had on-hand. My brown rice was supposed to be cooked for 35 minutes but I added it to the butter/onion mixture after 20 minutes of cooking. I only added 1.5 cups hot chicken broth. The proportions were perfect and everything tasted great! Thank you!

Brownie Mix in a Jar II

Excellent recipe! This is the first jar mix I have made and I learned very quickly that spaghetti jars don't work because they are too small. I added lib really quickly by putting the nuts in a baggie of Syran-Wrap and hanging it off the side with the same ribbon that held the instructions. I thought it looked lovely!

Gingerbread Cookies I

The only thing I did in addition to the recipe, was refrigerate the dough 1/2 hour before rolling it. This seems to work with all of my cut-out cookies. Because of this, I didn't add additional flour like some other reviewers suggested. Fantastic recipe!

Vegetarian Refried Beans

I put the dried beans in a pressure cooker to speed up time and use less energy. I soaked 2 cups dried beans overnight and processed in the cooker for 6 minutes the next day. I then drained the water and added the rest of the ingredients to the beans. I used a potato masher, but should have used a food processor for a smoother consistency. Then I added one cup of the juice/water left over from the cooker and let everything simmer for about 30 minutes. It was okay, but I thought it lacked something. Maybe it didn't taste right because I used the pressure cooker and didn't boil them for hours.

Creamy Twice-Baked Potatoes

Excellent! I baked the potatoes one day, put them in the fridge, and then made the filling the next day. They turned out wonderful! I added cheddar cheese and onions for extra flavor.

The Best Bean and Ham Soup

I didn't have ham so I used some leftover kielbasa sausage sliced and fried in olive oil. It was phenomenal!! It had a chili consistency and tasted like really good baked beans. I would definitely recommend!
