Peppermint Bark

Chocolate does not stick to waxed paper so there is no reason to grease the pan or the paper. After sprinkling the crushed peppermint, I lightly pat it into the chocolate to ensure that it sticks. I also took another reviewers advice and added the white chocolate about 10 minutes after the dark chocolate was in the refrigerator to keep the layers from separating. Instead of worrying about wax paper crinkles using a 9x9 pan, I just spread the chocolate on a cookie sheet and break off irregular chunks.

Coconut Cream Meringue Pie

Excellent texture and taste! For me it tasted like a combination of coconut and bananas! One thing I would do different next time is begin whipping the eggs at the same time I begin stirring the custard because the eggs took 30 minutes to whip whereas the custard only took 15 minutes to cook.

Perfect Butternut Squash Muffins

This recipe made 1, 9x5 loaf and 1 mini loaf. Bake mini loaf for 30 min. and big loaf for 50 min. I used apple butter in place of oil and it turned out great! I will make again!

Delish Coconut Muffins

Interesting texture... This recipe makes 18 regular-sized muffins. Even with 1/2 tsp. baking soda added the muffins didn't rise. I filled the muffin cups 1/2 full and they were the same size after baking and kind of doughy in the middle. I added some minced chocolate chips to the batter for a bit more taste.

I think it was overall good but I had to add almost an extra cup of flour to make it workable. I don't have a bread machine so I just mixed it together, needed it a little and let it rise 30 minutes.

Tofu Fudge Mocha Bars

I'm not sure if this made a difference but I used tofu that had been previously frozen. The texture was cakey...not fudgy. I also took the advice from other reviewers and made it in a smaller pan. They didn't rise at all and were very dry.

Carrot Zucchini Casserole

Lettuce and Tarragon Soup

It was good but not very hearty if you know what I mean. I used spinach instead of lettuce to give it more nutrition. If you have my luck, you'll have green soup splattered all over the kitchen when you use the blender...it's fine with chunks. I put my spinach through the food processor before I added it to the pot.

French Silk Chocolate Pie I

I doubled the recipe as others suggested and it fit perfectly in the graham cracker pie crust. I'm not sure if this was supposed to happen, but the filling ended up having chunks---it looked like I had crushed oreo cookies in it. I noticed this started forming when I put the 3rd egg in. In the end, it tasted smooth with the occasional chocolate chunks which tasted just fine to me and the guests. Yes, I will make this again!

Green Risotto with Fava Beans

Excellent! I was a bit hesitant to try, but I'm happy I did! I used 1/2 cup brown rice instead of risotto because that's what I had on-hand. My brown rice was supposed to be cooked for 35 minutes but I added it to the butter/onion mixture after 20 minutes of cooking. I only added 1.5 cups hot chicken broth. The proportions were perfect and everything tasted great! Thank you!

Brownie Mix in a Jar II

Excellent recipe! This is the first jar mix I have made and I learned very quickly that spaghetti jars don't work because they are too small. I added lib really quickly by putting the nuts in a baggie of Syran-Wrap and hanging it off the side with the same ribbon that held the instructions. I thought it looked lovely!

Gingerbread Cookies I

The only thing I did in addition to the recipe, was refrigerate the dough 1/2 hour before rolling it. This seems to work with all of my cut-out cookies. Because of this, I didn't add additional flour like some other reviewers suggested. Fantastic recipe!
