Onion Quiche

This is a staple for my recipe book. Its delicious as is and extremely adaptable to whatever you have on hand. I have added bacon, toasted pine nuts, paprika and nutmeg to it with great success.

Fruited Curry Chicken Salad

A very tasty dish that both my husband and I enjoyed. Things I did different, I used 2 chicken breasts instead of 4 (only 2 of us to feed), and half the amount of onion (not to thrilled with raw onions). Overall a very good recipe that allows for changes according to invidual taste.

Baked Dijon Salmon

I got rave reviews from my family on this recipe. I used Grey Poupon Dijon mustard and the flavor was complementary with the salmon without overpowering it. The crust that goes with this recipe is also outstanding. Definitely a recipe I'm keeping.

Pesto Cheesy Chicken Rolls

My family loved this. I did as another reviewer suggested and paired this with the pan-fried asparagus and brown rice with lime sorbet for dessert. I did put pesto sauce on the top of the chicken and cooked it for 30 minutes @ 400 degrees.

Shepherd's Pie

Both my husband and I enjoyed this recipe and I will be making this again. Things I changed: I added in 1 beef bouillon cube and a dash of Italian seasoning to the beef mixture, left out the mushrooms, and used Butter & Herb Instant Mashed potatoes. Next time I will probably add in some chopped onions, and my husband suggested putting this in a pie crust.

Wild Rice Chowder

My husband and I both loved this recipe. I did do as another person suggested and sauted the chicken (2 cups) in Italian seasoning and Garlic before sticking everything in a crockpot to cook on high for 4 hrs. This is perfect for a fall/winter meal!
