Blueberry Crumb Bars

Quick, easy & delicious. I did follow suggestions and used 1/2 white, 1/2 brown sugar in the crust. And I replaced half of the shortning with unsalted butter.

It Won't Last Cake

Have no idea how this tastes, I've got to clean out the oven and shut off the smoke alarm first. I even used 6 cupcakes plus the 9" bundt & everything has overflowed.

Chocolate Chip Banana Muffins

Wonderful, easy recipe. I also changed a couple of things to create a healthier snack. Whole wheat flour, 1/3 C FF plain yogurt, 1/3 C canola oil & 1/3 C FF milk. Baked @350 for 20 min. They froze very well in individual ziplocks - defrost overnight in the fridge.

Brownie Mallow Bars

I'm always looking for something a little different, yet quick and easy, to bring to church functions. These went over wonderfully! Not a crumb left. And plenty of room in the recipe to utilize what's in the pantry.

Crab Ceviche

I took this to a party for a bunch from my excercize class and got Kudos all over the place. The girls went nuts for the fact that served with whole grain crackers and chips, this appetizer is low fat, low calorie and full of flavor. Not for the picky eater, the cilantro does have a big impact on the taste buds. I did tweak the recipe a bit - I doubled it all, but substituted small salad shrimp for the extra crab. Overall, a wonderful alternative to the usual dips served.

Banana Oatmeal Cookie

Not happy with these. Burned the first batch - 400 and 15 min was way too much. Had better results at 350 and 12 min. The cookie still ended up with a pasty texture and not much flavor.
