Thunderbird Stew

This dish was delicious! I only made a couple slight changes: I substituted 1-1/2 pounds of venison stew meat, and I added 1/2 cup of water due to cooking time. The meat cooked all day - about 11 hours by the time DH got home. The gravy had a wonderful flavor and covered any gamey taste in the venison, which was out-of-this-world-tender. We served this over jasmine rice (yum!), with steamed broccoli on the side. This is going into my favorite recipes binder!

Fettuccine with Sweet Pepper-Cayenne Sauce

We made this a couple nights ago and it was delicious! DH and my sister both loved it as well. We did thinly slice a chicken breast (1/2 lb) and cooked it with the peppers. Next time I will probably try adding shrimp. Our 6 thumbs up!

Ginger-Lime Chicken with Coconut Rice

This was pretty good, though a little heavy on the lime. If I make this again I will use the juice from only 1 lime. Also, I only had 1 Tbls of ginger, but it seemed like a good amount.

Pork Chop and Potato Casserole

DH loved this casserole! I thought it was ok. I did season the chops with salt, pepper, and a little garlic powder. Also added two slices of onion. Next time I may brown the chops a little more and carmelize the onions for a little more flavor. Make sure to turn down the heat to low or medium low after adding the potatoes and soup. Both were deliciously tender after 45 minutes!

Pork and Mushroom Stew

This was a pretty good recipe. It was a little heavy on the onions, but they did lend a lot to the flavor. We might have left this in the slow-cooker a little too long (10-ish hours) - the onions were very soft. But the pork was amazing!!! So tender and delicious! Oh, one change: we didn't have the mushroom soup with roasted garlic, so I used cream of murshroom soup and added a quartered clove of garlic.

Baked Honey Mustard Chicken

This was delicious! It is slightly sweeter than we'd expected, but it came out wonderfully - yummy, tender, and juicy. And it was really simple to throw together besides. :)

Simple Turkey Chili

This recipe was fantastic, though I added my own touches... Used a can of mild chili beans besides the kidneys, and mashed half of each can. Added a 4 oz. can of mild green chilies. Also diced half a green pepper and did not cook it or the onion until all the ingredients were mixed. Cut the water in half to make it thicker and heartier, and added a dash of cinnamon. We are definitely saving this recipe - it is the best we've tried so far! Edit: I've made this a second time now, this time in the slow-cooker. We did not change anything except to add a little more water. We left it on low for the day (8 hrs).
