Cone Cupcakes

Reviewed: Feb. 14, 2012
Nice idea, but didn't work too well for me. It made the cones get really soft. I guess if you eat them right away it would be ok, but you can't make them for the next day.

Yum! these were tasty! I used flour instead of mashed potato flakes like other reviewers. I did flour, egg mix, flour again. Thanks for the recipe Kimber!

Plum Blueberry Upside Down Cake

Reviewed: Aug. 12, 2011
Yum! This was tasty and a really pretty presentation too! I made these in mini pie pans to make individual servings. I used veg. oil to mix with the brown sugar for the bottom, and I used soy milk to keep it non-dairy. Thanks Blondini12!

Salmon with Brown Sugar Glaze

Reviewed: Aug. 3, 2011
Yum! I added a squeeze or two of honey to this, used about 1/2 tsp mustard powder, a squirt of yellow mustard (since that's all I had) and I added a little bit of minced garlic and a "tinse" of lemon juice. Cut some slits in the fish to let the glaze run through, and put a layer of tin foil on the bottom of the pan. Marinated about 10-15 minutes. Really tasty! Next time, I'll try substituting some honey instead of the brown sugar instead of adding it, since it made the sauce a bit too sweet. Thanks!

Salmon Patties I

Reviewed: Jan. 24, 2011
We really liked these. I added the liquid from the can, and some paprika, 1 t lemon juice, and 1 T mayo. I didn't have an onion so I used minced dried onion. I fried the patties, then added a slice of cheese, put in on a toasted bun, then spread some mayo/lemon juice mix and some salsa on top. With the additions, it was really yummy!

Orange Herb Roasted Chicken

Reviewed: Jul. 17, 2010
Yum, this was a really tasty chicken! I used about 3 Tablespoons smart balance instead of the butter, and I mixed the herbs with the smart balance to put under the skin. I also substituted olive oil instead of the melted butter, and drizzled it on top. I probably only used about 1/4 C. Thanks, Nellie!

Baked Lemon Chicken with Mushroom Sauce

Reviewed: Jul. 21, 2011
This was good, but a bit too lemony for me. I used chicken cut in 8ths instead of the breasts.

Strawberry Tiramisu Trifle

Reviewed: May 29, 2011
I didn't really follow the directions, but it was AMAZING! I used a Yellow Duncan Hines cake mix, put a layer of the cake on the bottom. Then I mixed together 2 T strong brewed coffee with 1 T rum and sprinkled that on top of the cake. Then the cream cheese (used toffutti brand to keep it non-dairy)/whip/pudding mixture (I mixed one small box of pudding mix with 3/4 C non-dairy creamer). Then put a layer of strawberries (mixed with some sugar- then let that sit a while, then added about 4 T. strawberry jam). Layered it again, this time putting the strawberry mix then the whip mix so I could decorate it with fresh strawberries. It was SOOO delicious. I also sprinled some mini chocolate chips between the layers and on top. Next time I would try increasing the coffe/rum mix, since we didn't taste that so much.

Blake's Best Steak

Reviewed: Oct. 12, 2009
This recipe wasn't my favorite, though I did make it in the oven rather than on a grill, and I used dried rosemary. I might try it again with fresh rosemary.

Wonderful Short Ribs

Reviewed: Jun. 22, 2009
This was very tasty! I browned the meat first and then sauteed the onion in the drippings as per another reviewer. I then added the rest of ingredients as the recipe stated. It definitely went well with rotini and some veggies steamed with garlic and onion spices. (I used a 1 1/2 pound package of meat, so I adjusted the recipe as follows: 16 oz tomato sauce, 2 T lemon juice, 3 t Worcestershire, 1 T parsley, 3/4 t thyme, 2 bay leaves, 1 1/2 T brown sugar, 3/4 t salt, and a couple shakes of red pepper flakes)

Berry Shortbread Dreams

Yum! I put the mixture in the freezer for about 40 minutes before I made the cookies. I used half margarine and half smart balance which turned out fine. I used vanilla instead of the almond for allergy purposes. Thanks!

Caramelized Baked Chicken

I thickened the sauce by boiling it and adding some cornstarch before pouring it on the chicken. It's not my favorite chicken though. I thought the sauce was too much.

YUM! I added 1 tsp vanilla. I did put the batter in the fridge for a while b/c they really spread out for me- these were really thin cookies. After being in the fridge for a while they spread a tad bit less. Thanks Ellie!

Cream Filled Cupcakes

Reviewed: Feb. 8, 2011
These were DELICIOUS!!! I used soy milk to keep it non-dairy. I used 1/2 C margarine instead of the butter/shortening, and I used OCEAN011's frosting recipe, which I will definitely be using again even for other recipes. (I only used 3 cups, not 3, 1/2 of the confectioners sugar, and I ended up adding a bit more soy milk too). AWESOME recipe! Thanks Grace W.!
