Plum Blueberry Upside Down Cake

Yum! This was tasty and a really pretty presentation too! I made these in mini pie pans to make individual servings. I used veg. oil to mix with the brown sugar for the bottom, and I used soy milk to keep it non-dairy. Thanks Blondini12!

Salmon with Brown Sugar Glaze

Yum! I added a squeeze or two of honey to this, used about 1/2 tsp mustard powder, a squirt of yellow mustard (since that's all I had) and I added a little bit of minced garlic and a "tinse" of lemon juice. Cut some slits in the fish to let the glaze run through, and put a layer of tin foil on the bottom of the pan. Marinated about 10-15 minutes. Really tasty! Next time, I'll try substituting some honey instead of the brown sugar instead of adding it, since it made the sauce a bit too sweet. Thanks!

Miniature Chocolate Eclairs

These really made an impression! They were easier than I thought they would be, but the dough was a bit sticky to work with. I used 3 eggs, margarine instead of butter, and I made a vanilla pudding filling (made with vanilla pudding mix, 2 cups soy milk- to keep it non-dairy, and a container of whippping cream to make it a thicker consistency- since the soymilk doesn't let the pudding thicken). In my oven, it definitely took less than 35 minutes- they got a bit overdone. Also, don't grease the cookie sheet! Thanks for the recipe!

Portobello Penne Pasta Casserole

Love Love Love! We use this recipe often since everyone in my family LOVES this! I use olive oil instead of vegetable and vegetable oil instead of margarine. I cut back by 1-2 Tablespoons of the soy sauce to reduce the sodium. YUM!

Strawberry Tiramisu Trifle

I didn't really follow the directions, but it was AMAZING! I used a Yellow Duncan Hines cake mix, put a layer of the cake on the bottom. Then I mixed together 2 T strong brewed coffee with 1 T rum and sprinkled that on top of the cake. Then the cream cheese (used toffutti brand to keep it non-dairy)/whip/pudding mixture (I mixed one small box of pudding mix with 3/4 C non-dairy creamer). Then put a layer of strawberries (mixed with some sugar- then let that sit a while, then added about 4 T. strawberry jam). Layered it again, this time putting the strawberry mix then the whip mix so I could decorate it with fresh strawberries. It was SOOO delicious. I also sprinled some mini chocolate chips between the layers and on top. Next time I would try increasing the coffe/rum mix, since we didn't taste that so much.

Broiled Short Ribs

I liked the method of cooking the meat. It was really soft. I didn't love the flavor, but my husband liked it a lot. I did boil the meat with about 2 tsp. beef broth in the water and I added cornstarch (mixed with water) to the sauce. I think next time I'll try a different sauce with this cooking method. Quick and Easy Alfredo Sauce

Yum! This was awesome (though fattening)- I followed Reg927's recommendations and used 2 tsp minced garlic, 1 1/3 C 1% milk and 4 oz. parm. cheese. Next time, I might add the sea salt and a bit more pepper. Sooo tasty! I poured it over pasta, broccoli and tuna.

Mendi's Favorite Orzo

This was yum! I used canned mushrooms since I didn't have fresh and I sauteed an onion in evoo instead of onion powder. I also cooked the orzo in 4 C chicken broth and let it cook until all the water was gone and the orzo was soft. Thanks for the great recipe!

Fudgy Chocolate Cream Pie

This was awesome! I followed nrgizrbune41's advice, and added an extra 2 t cornstarch and 1/2 C milk, and it was perfect. I used 2 T chocolate chips (I think I might try 3 T next time). I also made sure to bring it to a hard boil (still bubbling even when mixed), and I was careful not to let it go longer than a minute to avoid it becoming too thin. I topped it with whipped cream and chocolate sprinkles. It was a big hit!

Cream Filled Cupcakes

These were DELICIOUS!!! I used soy milk to keep it non-dairy. I used 1/2 C margarine instead of the butter/shortening, and I used OCEAN011's frosting recipe, which I will definitely be using again even for other recipes. (I only used 3 cups, not 3, 1/2 of the confectioners sugar, and I ended up adding a bit more soy milk too). AWESOME recipe! Thanks Grace W.!

Salmon Patties I

We really liked these. I added the liquid from the can, and some paprika, 1 t lemon juice, and 1 T mayo. I didn't have an onion so I used minced dried onion. I fried the patties, then added a slice of cheese, put in on a toasted bun, then spread some mayo/lemon juice mix and some salsa on top. With the additions, it was really yummy!
