Fresh Tomato Salsa

Reviewed: May 14, 2010
This salsa is yummo! I added 1 chopped avocado, 1 tsp minced garlic, and a little bit of vinegar and black pepper. We used this on top of home-made nachos with some sour cream... mmm.

Quick and Easy Chicken Noodle Soup

Reviewed: Mar. 19, 2009
This is really good, but the recipe as written has at least one can too much broth. We added extra veggies, chicken, and noodles. I also added a dash each of thyme, parsley, and rosemary. Turned out very good and was easy to make.

Banana Pancakes I

Reviewed: Feb. 9, 2009
These were good but we added 1/2 tsp vanilla and 1/4 tsp of cinnamon. They were a little more dense than we normally like our pancakes, but we still thought they were yummy. I definitely recommend cooking them slowly, so they don't burn and the middle cooks through.

Baked Salmon II

Reviewed: Feb. 9, 2009
This recipe is very good and very easy. I just place the salmon in tin foil, throw all the ingredients on top, wrap it up, and cook on the George Foreman until its done. One of my favorite ways to make salmon.

Cha Cha's White Chicken Chili

Reviewed: Jan. 30, 2009
This is a great alternative to regular chili. I made it with some cornbread and it was very filling. The only changes I made was 1) add a can of corn & 2) puree 1 can of the beans. Delicious!

Amy's Cilantro Cream Sauce

Reviewed: Jan. 12, 2009
This sauce is SOOO good, but I love cilantro so maybe that's why. My boyfriend does not like cilantro but actually ate the sauce. I made it exactly as the recipe states. We put it on top of shrimp quesadillas that I whipped up with frozen shrimp, black beans, veggies, and spices. I definitely recommend this sauce. I think it would be good on any type of mexican dish, or most seafood dishes.

Janet's Rich Banana Bread

Reviewed: Jan. 6, 2009
This banana bread is so delicious and moist. However, I did mash the bananas rather than slice them. I also added 1 tsp cinnamon and 1/4 tsp nutmeg and I omitted the walnuts. This will be my regular banana bread recipe from now on (but with mashed bananas, not sliced).

Easy Batter Fruit Cobbler

Reviewed: Jan. 6, 2009
This was really good and so easy to make, so it gets 5 stars from me. I used a cup each of fresh raspberries and blueberries. I added about a teaspoon of vanilla and I added a few dashes of cinnamon to the batter. I also reduced the sugar by about 2 tablespoons. It would have been too sweet otherwise. Will definitely make this again.

Fluffy French Toast

Reviewed: Jan. 4, 2009
This french toast was tasty, however, I can't give it 5 stars because there just wasn't enough batter for 12 pieces, and I didn't even use thick bread, or saturate the bread. I used regular sandwich bread. Next time I will definitely make more batter. The french toast was very good, but not a huge difference from regular french toast.

Great, simple frosting. Used with Sandy's Chocolate Cake recipe from this site (made cupcakes). They turned out delicious.

Oatmeal Peanut Butter Bars

I was not that impressed. I thought these were way too sweet and mine came out very mushy, not dry at all.

Sandy's Chocolate Cake

Reviewed: Jul. 8, 2008
Mmmm this cake was so good! I cut the recipe in half and used two squares of unsweetened chocolate in place of the cocoa. I baked it in a 9x13 pan for about 25 minutes. I did not try the frosting but used a butter cream frosting from this site. The only problem that I had was that the cake came out kind of 'wet' but maybe that is because I put the frosting on while it was still hot (next time I will be patient!). Will definitely make this again. Update - made again as cupcakes (still using the unsweetened chocolate). I let them cool completely before adding the frosting this time and they turned out perfect.

Chocolate Sandwich Cookies II

Reviewed: May 21, 2008
These were pretty good for some easy chocolate cookies, but the texture and flavor was pretty much the same as boxed brownies. I couldn't really taste the cream cheese in them so I would definitely suggest adding more.

Raspberry Cream Cheese Coffee Cake

Reviewed: Mar. 21, 2008
I thought this was delicious. Although I did add extra raspberry jam and some frozen raspberries. There was a bit too much almond for my tastes; I reduced to 1 teaspoon. I used a 9 inch springform pan and did not have the problem of the crust being too thick or the batter overflowing in the oven. Thanks for posting! Will definitely be making again.

Asian Orange Chicken

Reviewed: Mar. 6, 2008
Mmm this was very good. I was nervous because I had never made an Asian dish before but this turned out great. I used brown rice and added steamed broccoli. The only thing that I changed is, instead of mixing the chicken into the sauce, we kept the sauce separate and poured it on as needed. We will be making this again.

Salsa Chicken

Reviewed: Feb. 28, 2008
This is a delicious and simple recipe. We added some extra cumin and cooked on a bed of yellow corn. We also added crushed tortilla chips to the top after it was done baking. I gave it 4 stars because without these changes, this wouldn't have been quite as good.

Ricotta Cookies III

Reviewed: Feb. 21, 2008
These were a great way to use up some extra ricotta that we had. For a nice light soft cookie with a little lemon flavoring, these hit the spot. I made half with almond extract in the frosting, but I think the lemon were much better.
