Baked Tomatoes Oregano

Pork with Peach and Black Bean Salsa

We made this dish for the first time the other night and were feeling pretty pleased about having the forsight to make a double batch. We figured it would be a quick and yummy leftovers dinner, too. However, our son ended up getting ahold of it and didn't leave enough for the rest of us. It was great!

Auto Parts Chicken

I made this tonight after finding it through an ingredients search. However, I didn't have carrots or a leek. I substituted asparagus and large green onions. I also used fresh parsley instead of dried. I found the dish to have a wonderfully light flavor. My son couldn't seem to stop complimenting the meal.

Cranberry Sauce I

I made this for our Thanksgiving meal and my family *loved* it. Just an FYI, I happened to make the recipe as written because that was my choice, and not because the recipe review gestapo said to... to those of you have made changes and they worked, my hat is off... and for you of us who didn't because you didn't have time to think of something else or felt it was *really important* to do it exactly as directed, I hope all turned out as well for you as it did for me.

Gouda and Spinach Stuffed Pork Chops

My husband made this for Mother's Day. It's a darned good thing he made extra, because we all LOVED it! He thinks that many kinds of cheeses could work, but I really think the gouda was the way to go.

Spinach and Leek White Bean Soup

The soup smells delicious, looks beautiful and, as my husband said, "tastes alright." Maybe if we'd used the vegetable stock as recommended it would have been better. The suggestion to add the spinach to each bowl just before serving was a good one!

15-Minute Marinated Chicken

I marinated some chicken this marinade this morning for an afternoon barbecue at a friend's house. Instead of spreading it on, I put everything in a zippie and made sure all pieces were coated. It had a lovely, light flavor. Simple and delicious, we'll definitely make this again.

Mom's Zucchini Bread

I made this as written the other day, but baked in mini loaf pans, which only took 38 minutes. It was a huge hit! Made it again this morning with a few changes, mostly based on suggestions in other reviews. 1) Peeled the zucchini before shredding. The other day I got a couple pieces of skin that had a papery texture... blech! 2) Bumped up the zucchini to 3.5 cups. 3) Substituted one cup of white sugar for one cup of brown sugar. 4) Baked as muffins, which only takes 30 minutes. Awesome!

Sauteed Apples
