Corrigan's Minestrone

I like this recipe. I followed what other suggested though and used half the veggies and I also added have a box of frozen spinach. I over baked the noodles though so they're soggy but the soup itself is good. Will make again but definately reduce the amount to half liquide and quarter of the veggies. This is how I made it though cause it seemed to be missing directions. I put the oil in a large pan and added the veggies to them on medium heat and cooked them for a few minutes to soften them up a little. I also simmered everything together for approx and hour then added the noodles and cook until noodles are done.

Bacon Wrapped Hamburgers

These burgers were really good. The only thing I didn't do was wrap it up in bacon, didn't have any on hand. They turned out nice and juicy and the entire family loved them. Will definately make these again and will try with the bacon too. Thanks for sharing this great recipe. Update:March 11, 2009 This is still our favourite and only burger recipe. I made them a few days ago and pan fried them this time as I ran out of propane for the BBQ and they are just as good. The bacon definately is a must as it adds so much flavour. It also makes it look more fancy like a filay mignon. YUM YUM YUM!!!

Banana Muffins II

These were just ok to me. I added 1tsp of vanilla and still tasted like it needed more banana. I didn't use any butter at all just used 1/4 cup apple sauce. The texture is good. and they turned out nice looking and even smelled really good. Probably won't make these again.

Golden Yam Brownies

I'm giving it a 3 simply because it is way to sweet, and makes ALOT!!! I followed the recipe however I used 1 3/4 cups pureed yams because I already had it on hand. I will try it again however I will use half the sugar and half the recipe as it made way to much. My 9x13 pan was full. It also took twice the time indicated. It is a great idea though but I will make changes to it and adjust it to our taste. thanks for sharing.

Tea Biscuits

I'm giving this a 4 for now. I didn't have shortening so I used half butter and half tenderflake. I also used 1 1/2 cups flour and 1/2 cup whole wheat flour. The texture came out just right but the taste was a little off. Not sure if it was from the tenderflake or too much baking powder. I will try it again and use half shortening/butter and reduce the baking powder a little. Tasted ok with the butter though and I'm sure with a little jam on it it will be ok too. I didn't have a pastry knife so I used a fork and it worked fine, I also kneeded the dough in the bowl then pressed it on a cling wrap like a previous post suggested. I didn't use a rolling pin because the dough was sticky. I pressed them into a large 3/4" square then cut 12 smaller squares. Seems way easier then having to dip a glass and having to roll out the dough to many times to use up all the dough. Very simple though, good job!

Banana Crumb Muffins

These were so good. I made them in the tiny cup and those turned out the best. I also made 6 large ones and I didn't like those as much, found they were dry. Definately will make again but in the tiny cups. Also, to make sure the crumb topping stays on you have to press it in before baking otherwise it will just fall off as you are eating it.

Eclairs II

These were pretty simple to do and really good. My only problem with it is if you don't plan on eating them all right away you shouldn't add the pudding in it right away or it will get really soggy. Also I made a hole on the side of all the puffs so they don't get soggy while cooling. I made about 24 and they were pretty big, a few big bites. I can't imagine how big 9 would be. I didn't have a pipping bag so I used 2 soup spoons and they worked out great. Delish though and I will make again and only stuff as I'm eating them.

Potato Pancakes II

To me this recipe was just ok. Very bland flavour. Good base recipe and next time I will add more spices and more cheese, I might also add chopped up cooked whole potatoes to give it a more firm texture and sprinkle the top with more cheese.

Caramel Bars

I'm only giving this a 3 star because mine looks nothing like the pictures. I even used a 7X11 pan instead of 9X12 and it was still really thin, like 1/4inch thick. It also stuck to the pan even though I greased it. From what I did get out of the pan it was ok but maybe if I make this again I will do a double batch and use parchment paper so it doesn't stick. I will also use less chocolate chips as it tasted way to much like chocolate and hardly had any caramel.

Fudge Brownies I

These were very easy to make. I just melted the butter in the microwave then added the chocolate. I also only used 2 eggs for no particular reason and they turned out great. I only used 1 3/4 cups of nuts and will reduce it to 1 cup next time.

Classic Peanut Butter Cookies

These are really good, I added an extra 1/2 cup of peanut butter and flour. Yummy! They were all gone within a day! **Feb 2, 2009 I made these again and they are still yummy! I only added 1/2 cup more peanut butter and they came out a little flat. They are definitely a delicate cookie to bake cause if its to long it gets hard but they still come out tasting great. These will not last long in my house soft or crunchy! I didn't put them in the fridge this time so maybe that's why it came out a little flat. I used a tbsp to make the balls and I got over 70 cookies.

Carrot Cupcakes with White Chocolate Cream Cheese Icing

I give this a 4 just cause it was more of a spice cake rather then carrot cake. Still really good though. I followed the recipe and I also got 18 cupcakes not 12 and the icing is really good but made way to much, I could probably tripple the cupcake recipe to use all the icing.

Peach Cobbler

YUMMY!!!!! This was a very basic recipe and I had my doubts at first but it turned out great. As someone posted I used 6 fresh peaches and boiled them to get the skin off. I also added raspberries and sprinkled the top with white and brown sugar. Very delish. I ate all up in a few days. Definately will make this again.****************************************************************************made this again but ran out of sugar so I figured honey would be the same I just added it to taste so not sure how much I added but was prob about 1/2 cup, it did not turn out at all, the peaches stayed on top and the bottom burned but the center was still slimmy, I would strongly suggest NOT using honey, sadly I will have to through it out and start again once I get some sugar and more fresh peaches

Deluxe Chocolate Marshmallow Bars

It was good, very sweet thought. Makes alot and freezes easily. I didn't spred the marshmallows and it still turned out great. Next time I will make half the recipe and try peanuts instead of the rice crispies.

I liked these. I accidently put a little to much lemon juice but they still turned out great. Wasn't very fond of the crust though. They freeze well and taste even better after being frozen. Will make again.

Strawberry Oatmeal Bars

This is a very good recipe. I did have to use a smaller pan because I didn't have enough crust for the bottom. I will deffinately make this again but with these changes, 1.5 cups flour, 1.5 cups oats, 2/3 cup sugar, 2/3 cup butter, didn't use salt because butter is salted. This will give me more crust as it was very delicate. I also used raspberry jam and it was very yummy. I'll try appricot next time just for a change. Very good though. :)
