Rosenmunnar

Reviewed: Dec. 23, 2008
If I was given the option it would be 4.5 just because I added 1tsp of almond extract. Other then that they were very yummy! I used a tbsp to scoop up and roll them into balls and it gave me a total of 38 perfect little cookies. I pressed the hole really deep so the jam doesn't spill out. I also used a baby spoon to put the jam in, worked great cause its so small like the holes. I know I will have to make more of these little cookies real soon as I am giving away 3/4 of them to my husbands staff. Next time I might try skors pieces or even a chocolate mint in the hole.

Shrimp Couscous Salad

Reviewed: Dec. 14, 2008
This took me a few days to actually figure out how I felt about it. It was kind of long to make as I tried to cute the peppers small and also cut the shrimp. It also makes way more then 4 servings as I am still eating it after 4 days. I tried it as soon as it was done and it was just ok so i put it in the fridge and later on that night I had more, it tasted much better. I used all the sauce and just stirred it before eating so it wouldn't clump up. It is very good the older it gets but I couldn't site here and eat a full bowl of it as it would be way to much but good as a side dish or snack. I will probably make again but cute the recipe to 1 serving. Oh just to give everyone an idea of how much this makes, I stored it in a 48oz bowl and it was full!!! Very good though thanks for sharing! I'm giving it a 4.5 as the serving size is way off. Update: I've made this many more times since and it very good. I reduced the serving to 1 and it makes a few small servings for me. YUMMY!!!

Kung Pao Chicken

Reviewed: Dec. 10, 2008
This was fun and easy to make, the only thing I didn't have and couldn't find was the chili paste. My family and I didn't really care for it. Didn't really have taste to it was like chewing on plain chicken, maybe the chili paste makes it taste better. I might try it again but still not sure. I didn't double or triple anything made it as it said and the sauce was fine, the only thing I would suggest is if you want to put it on rice and have the sauce on the rice then double/triple the sauce.

Scented Applesauce-Cinnamon Ornaments

Reviewed: Dec. 4, 2008
I just received this recipe as an email from the McCormick site and they have that you can bake them at 200F for about 2 1/2 hours. They harden up nicely and you don't have to wait days to decorate them. Good recipe though :) 2008/12/6: I just tried to take them off the cookie sheet and they all stuck and broke :( gonna make them again but this time I'll put them on parchment paper Just made these today. Very easy to make, very sticky though. I just put them on a cookie sheet and there stuck so once there cooled I'll have to see what I can do to take then off. The only thing I didn't like about making this was the overwhelming sent of cinnamon in my house, at first it was nice but after baking for 2hrs WOW very strong. Still though the kids are looking forward to painting them tomorrow. Dec 5,2009: Just took them out today and they still smell nice :)

Hot Breakfast Couscous

Reviewed: Nov. 25, 2008
First off I have to say that I've never eaten couscous ever so this was my first taste. Its definately an interesting texture, kind of like cream of wheat but bigger and a little dry. I only made 1 serving and left out the dry fruit cause I didn't have any on hand. I put the couscous in a big mug and microwaved the milk/honey/cinnamon just till it was hot and added it to the mug, left it for a while and that was it. I do have to say like other reviews that it is dry but it was still good. I did like it the way it turned out but I think maybe next time I'll add a little more milk and a little more honey. Was not too sweet almost just right for my taste. I will try it again and maybe add cut up apples with a little more cinnamon. Good though and not dissapointed at all.

Pear Bread I

Reviewed: Nov. 17, 2008
YUMMY!!! Was a little skeptical about this one, but it turned out great. OK almost, I thought it was going to fit in one loaf pan and was cooking fine but after about 30 min it spilled, thankfully I decided to put a cookie sheet under it. Next time I'll just make 4 large muffins and the rest will go in the loaf pan. I didn't shred the pears either, mine were very ripe so all I did was mash them like making banana bread. The taste isn't so much pear but more spice-ish but tastes great either way. Will make this again though for sure and will add more pears. Might even try a variety of apple and pear together. Great recipe thanks!

Coquito

Reviewed: Nov. 17, 2008
This was my first attempt and first time drinking homemade eggnog. Personally I found there was a little to much cinnamon but other then that it was good. I tried it at different stages too, right when it was done when it was still warm, after being in the fridge for a few hours and over night and I prefer it warm. I didn't add the rum though because I want my 3 and 1yrs old to drink it too. It was good and relatively easy to make using just a regular pan on low but I don't think I will make it again. Pretty costly concidering you can buy a 2L of store eggnog for 2$ and to make this it cost about 5$. It was good though and I enjoyed making it and drinking it, but I'll stick with store bought for now.

Easy Lemon Cookies

Reviewed: Nov. 10, 2008
Ok there were interesting to make. Was kind of weird putting soft dough into icing sugar but it worked. They turned out well but I found them really sweet and fruit loop tasting. Not a favourite here. Was too cakelike too.

Brownie Biscotti

Reviewed: Nov. 6, 2008
OMG these are good! I've never made or eaten biscotti before and I have to say these are by far my favourite hard cookies. I will definately make these again and again and again. I may even try to dip half the biscotti in a little mint chocolate for the holidays and swirl a little green and red coloured white chocolate over them too to make them more festive. What a great recipe, thanks for sharing!Update:March 11, 2009. I made these for a bake sale for my husbands work and they were a hit! I swirled chocolate all over them and they were good. I did over bake them a little so they were extra hard but still good.

BAKER'S® ONE BOWL Coconut Macaroons

Reviewed: Nov. 5, 2008
These are very yummy and oh so easy to make. The only thing I did different was using 3 egg whites instead of 4 because I had large eggs. I made them plain this time, but next time I will dip the tops with chocolate.

Carrot Cake III

Reviewed: Oct. 15, 2008
OMG these are awsome!!!!! I've had many carrot cakes but these are the best. I did change it slightly though. I used 3/4 cup apple sauce and 1/2 cup oil, and reduced the sugar to 3/4 cup each white and brown sugar(did this because the icing is very sweet). Icing came out perfect too. I made them as mini muffins and only takes about 8 min to bake.

Szechwan Shrimp

Reviewed: Oct. 14, 2008
This was really good. Although I've never tasted restaurant style szechwan shrimp so I have nothing to compare to but it was great. Very tasty with already cooked rice tossed in at the last minute. I will make this again and add veggies to it. YUMMY!!!

Gnocchi with Sage-Butter Sauce

Reviewed: Oct. 14, 2008
I made this for lunch today. Not that bad but the recipe calls for way to much sage, I added half the amount and thought it was just ok. Next time I will just omit the sage.

Brown Family's Favorite Pumpkin Pie

Reviewed: Oct. 14, 2008
I'm giving this a 4 because I didn't add the toping so I can't really rate the full recipe. I did love this recipe though, nice light flavour. I used fresh pumpkin puree. Next time I might add a little more spices though but it was great. My egg whites for whatever reason didn't want to stiffen up but it still turned out nice and fluffy. For those who want to make small pies, for me it made 7.

Pie Crust IV

Reviewed: Oct. 14, 2008
I'm rating this a 4 for now because my crust turned out salty. I did use salted butter instead of shortning though then added the salt that was asked. Other then that it was perfect. Nice and flaky, easy to make. I will definately give this one another try and either not add the salt or use shortning.

Butternut Squash Soup

Reviewed: Sep. 29, 2008
I'm rating it a 4 because I liked it but my kids didn't. Its a very rich soup and I only added half the cream cheese. I also didn't have cayenne pepper so I did not add any. I cooked the squash the day before and just added everything together just before lunch. I will make this again however I will add a little more chicken stock and less if any cream cheese. I hope it freezes well. Thanks for sharing.

Blueberry Zucchini Bread

Reviewed: Aug. 20, 2008
This is my 3rd time making this recipe and just noticed something. The first 2 times I made this I used a small grater to grate the zucchini and it was more watery and this last time I used a larger grater and it was less liquidy cuting the cooking time a little. I also made muffins as I haven't bought the small loaf pans but I'm sure it would have turned out great in the large loaf pan as it was more dry then the first time. I used raspberries this time around too and YUMMY!!!!! My girls ate them up.

To Die For Blueberry Muffins

Reviewed: May 7, 2008
I'm rating it a 3 for now. I followed the recipe as it was written but they didn't turn out. The batter was pretty thick but that was ok. I think the problem was in the baking. It said to bake at 400 but when I checked them after 20 min they weren't cooked yet so I left them in for another 5 min. They still seemed a little undercooked but I took them out anyways. The inside was still a little sticky and the bottoms were black!!! I will try this recipe again but reduce the heat to 350. It also made more then 8, I filled it like it said and it over flowed in the oven and made a mess. Will try it again though cause it did seem like a good recipe.
