Fabulous Beef Tenderloin

This recipe was delish! Simple and easy. I added shallots to the soy sauce and melted better for added flavor. There wasnt a single piece left on the platter!

Broccoli Buffet Salad

This recipe was a smash at my Moms birthday picnic! She just raves about it. Very refreshing and lite on a hot day. Like that it didnt have bacon. Made a few changes: Used Dried cranberries instead of raisens and used orange juice (fresh sqeezed) instead of lemon juice. Also only used 1 tbs of sugar since orange juice is sweeter than lemon.

Easy Spicy Roasted Potatoes

I par-boiled the potatoes prior to baking them, this helped reduce the time it took cooking. I also only used about 1/2 the cheese and added some zucchini, onion and whold cloves of garlic to potoates while roasting. Very Delicious !!

Black Bean and Salsa Soup

This was a very tasty easy recipe to make. I had dinner done in 20 minutes! I added some ground turkey and garlic to make it more like a chili and I left some of the black beans whole. Will make it again!

Erin's Indonesian Chicken

This recipe was fabulous! Everybody loved. The peanut flavor is not overpowering so it is a nice flavorful dish. I added some sliced carrots and onion to the chicken while I was Sautéing it, I also added a little more soy sauce. Very appealing easy presentation.

Breakfast Casserole I

This is a very tasty recipe. I served it for easter brunch. It was a big hit! I will make it again. I used less bacon and added a little more cheese. I also added onions for more flavor. I prepaired the night before for an easy brunch that everyone loved.
