Beef and Cornbread Bake

We LOVE this casserole, it is a staple in my dinner rotation. I tweak it for some family preferences (less cheese for hubby's dairy problems, cream corn to temper the acidity for my heartburn, and ground turkey for overall healthiness), but the changes are minor. I try to keep the ingredients on hand in case hubby has a bad day at work, then I throw this together and it always helps to lift his spirits when he's feeling down.

Cheesy Broccoli Pie

Yummy, easy, and easily adaptable! Hubby is mildly lactose intolerant, so I lowered the cheese to just 2 cups, and it was still plenty cheesy for me, the cheese lover. He's also not a huge fan of broccoli, so I got one medium sized broccoli crown and chopped the whole thing up. I also wanted to make this a one dish meal, and I had about 3/4 lb deli ham that needed to be used PRONTO. So I chopped that up and tossed it in as well. If you wanted to make this even healthier, you could use egg substitute, low fat cheese, and low sodium ham.

Flourless Peanut Butter Cookies

Wonderful! I'm pregnant, and my big craving lately has been peanut butter. I'm getting a bit tired of eating it straight from the jar, so I hopped on AR to look for a new cookie recipe to try out. I've never done flourless before, but I'm amenable to experimental cookies. These did not disappoint. There's not too much to distract from the PB flavor, which is great. I added a splash of vanilla and made them bite sized, as recommended by other reviewers. I scraped a few off the sheet too early and ruined their structural integrity, so I tossed them in a bowl and plopped some ice cream on top! This will be my standard response to mushed cookies in the future!

No Bake Cookies III

Just the choc/pb fix I've been craving! I encountered one issue that turned out to be a wash. I made these on a very humid day, so they didn't set very well. All I did was pop them in the fridge and keep them there. Given how hot it's been, cold cookies are better than room temperature! So the minus was that they didn't set, but the plus was that my solution was also a good way to beat the heat. So overall it's a wash and I still love these cookies!
