Blueberry Buckle

Reviewed: Sep. 25, 2013
This was easy to make and tasted great!! I was a little nervous with how thick the batter was but it cooked up just right!!! I have to say to everyone thinking of making this - please make it as stated and review it as so. It is not fair to change up the ingredients/amounts and then rate the recipe according to your changes. Rate it for what it is and THEN give your suggested changes. Thanks!

Hungry Man's Baked Chicken

Reviewed: Jan. 11, 2013
I didn't care for this. Maybe I did something wrong? The only change I made was that I used chicken tenderloins instead of the chicken the recipe calls for. It turned out very dry and my family didn't care for it too much. Maybe it works better with the chicken with bone in it. Might try it that way again but not with tenderloins.

Corn Cheese Chowder

Reviewed: Oct. 26, 2012
This was a great recipe with a great flavor as is. My personal preferences make me want to add lots of "stuff" to it like some chicken and maybe some veggies to make it more of a chicken corn chowder because I like my soups more chunky. But, my 7 year old has been obsessed with Chip & Dale lately and if you have seen the episode where they make Cheese Chowder then you know why she requested me find a Cheese Chowder recipe to try out. She loved it and said "10 stars mom!".

Alfredo Sauce

Reviewed: Oct. 12, 2012
I made it as the recipe stated and it was bit "lumpy" but WAY better than anything out of jar!! I will double it next time because one batch was not enough for the 4 of us! I didn't add the parsley into the sauce. I sprinkled it on top because it's "green" and my kids have an aversion to green stuff :)

Fish Tacos

Reviewed: Oct. 1, 2012
I liked the beer batter on the fish. It was easy to make and tasted good. I did not care for the sauce. I suppose I was expecting more than I should have from reading all the reviews but it tasted like............yogurt to me...............and I had to add double the spices and a few drops of Chipotle Tabasco to make it edible. I am really sorry for the low rating but I was a bit disappointed :(

White Bean Chicken Chili

Reviewed: Sep. 27, 2012
I give this 5 stars because it is fantabulous......even though I will make some very minor adjustments for my liking next time around. As is, it has a wonderful flavor and tastes great. I used fresh tomatillos out of my garden. The chile peppers were also from the garden and I broiled until black and removed the skins before chopping them & adding them to the mix. Next time I may broil ALL the veggies before adding them because I love the richer flavor that broiling gives them. I am also going to add some more spicy in way of japs or serranos and then top with sour cream & cilantro. The cornstarch sounds like a good additive to thicken as well it but these are all PERSONAL PREFERENCES - this recipe is AMAZING as is and I rated it accordingly!! I'm not sure how everyone else can rate your recipe with all their tweeks because ITS NOT YOUR RECIPE anymore once they alter it!!! Thank you for another great way for me to use my TONS of tomatillos & peppers growing in my garden this year!!!

This had a great taste and was simple to make but I made a couple of adjustments the second time around. I used a LARGE box of COOK & SERVE pudding and it turned out even better!

Scott's Buffalo Wing Sauce

Reviewed: Sep. 24, 2012
I was cooking up some wings for Sunday Football and realized that I forgot to grab my wing sauce. Already having 2 beers, I wasn't driving to the store so I looked up recipes on here and found Scott's. I only had some Chipotle Tabasco sauce as my pepper sauce and let me tell you - this is IT. It was so good even my husband approved and he is a tough critic!! My sauce did separate when left for a while on the stove but I'm sure it had to do with the type of butter I used and didn't affect the taste. I mixed right back up as I shook my wings in it!! Thanks for the great recipe!!

Authentic Mexican Chili Rellenos

Reviewed: Sep. 20, 2012
These were awesome and not too painful to make!! I have made rellenos before using a different (but similar) batter and I think the baking powder and dip in the flour makes all the difference. The only things I can suggest is some method tweeking. I have always removed the seeds PRIOR to broiling. It was very difficult to remove the insides while the pepper was so soft and easy to tear. And the batter - I would suggest placing some of the egg batter into the oil and place the pepper on top and then spoon some more of the batter on top of the pepper and form it around the chile with a spatula. It sounds like a lot but it is easy and provides better coverage and is less messy. Taste was right on! I have a homemade salsa made of romas & serranos that I warm and put over the relleno.

Tomatillo Soup

Reviewed: Sep. 9, 2012
I LOVE this soup. It was very easy to make and it was even better made with fresh tomatillos from my garden. I probably added more than one pound to the recipe (I did't weigh them) and I didn't add any of the spicy seasonings except for the jalapenos (also out of my garden!). I didn't think my family would eat anything too spicy but next time I will add more fresh japs instead of cayenne or hot sauce because the japs gave it a great flavor. thanks for the awesome soup!!

Best Ever Jalapeno Poppers

Reviewed: Sep. 8, 2012
I gave this recipe 4 stars for 2 reasons. I made a small batch to test them out and the breading was fantastic. I think the trick to good breading is the multiple coats and allowing them to rest in between. I will use that tip on many other recipes in the future. My first reason for not giving it a 5 is that the larger jalapenos did not soften while frying. The second was that they were not spicy. For my next round of test poppers I boiled the peppers for a few minutes and then let them cool after I seeded them. Then, I added some chopped up jalapenos to the mix. They were even better! Thank you for the great recipe and hopefully my tips help!

Cool Cucumber Salsa

Reviewed: Aug. 24, 2012
Good flavor, easy to make. It had more of a pico de gallo consistency than what I think of as salsa but it was yummy with some corn tortillas or as a side with my enchiladas.

Inger's Spaghetti Sauce

Reviewed: Jul. 21, 2012
This was an easy sauce to make. I followed all the directions and then threw it into the crock pot for a few hours to simmer. It was good but a bit too tomato-y for me. I wanted to add something but just couldn't put my finger on what it was. As is, it was great on meatball subs but for pasta it needed something extra. I like the tip to add a cup of merlot. That might tweak it to my liking!
