Jalapeno Poppers I

MMM... so good! I did make a few changes, but not enough to rate the dish lower overall: I used reduced fat cream cheese and 2% sharp cheddar, Panko bread crumbs (only b/c I had no corn flakes);also fat free greek yogurt instead of mayo (personal preference). I sprayed the tops of each one w/ nonstick cooking spray. As a plus, my changes actually made the dish quite a bit lower in fat & calories... YAY! Also, my jalapenos were on the smaller side but I was able to stuff 30 of them with the filling as stated.

Delicious Egg Salad for Sandwiches

perfect recipe... exactly what I was used to eating when I was a kid,which makes its great and exactly what I was looking for!! I do, however, use a tiny bit less mayo as a personal preference only.

Slow-Cooker Chicken Tortilla Soup

I omitted the enchilada sauce and water, and instead used 4 cups chicken stock (2 cups reduced-sodium boxed broth, and 2 cups sodium-free boillion type broth). I used defrosted chicken breast tenderloins and shredded after cooking 3 hours on high, then continued on low for 2 hours. It was AWESOME!! Thanks for the recipe and sorry I changed it (my husband needs low sodium foods only due to high blood pressure)

Top Shelf Margaritas on the Rocks

Wow I just realized when I came to rate this that I made them wrong. I made as directed, without the egg white (Seemed kinda odd to me), and by mistake I did not add that last 1/2 cup of lime juice. I don't know why... I didn't even see it in the ingredients somehow! I did use a mixture of lemons and limes in the sour mix though, and it was slightly more than the 1/ 1/2 cups. I poured all of that into the pitcher. It's weird the recipe tells you to make all that sour mix and not use it all... But the end result were very good margaritas that are not too sweet. I used only 1 1/2 cups tequila instead of 2 cups, and although I would have preferred them full strength, all my guests still thought they were pretty strong and were glad I didn't use anymore tequila than that. I also kept the remaining simple syrup and let people add some if they preferred a sweeter taste.

Awesome and Easy Creamy Corn Casserole

This was awesome! I made exactly as directed except for sprinkling chopped green onions on the top. I thought about adding some shredded cheddar but didn't, and am glad because it didn't need it! I did have to bake it about 15 minutes longer than the instructions though, but possibly due to using an 8" X 8" instead of a 9" X 9"

Bill's Sausage Gravy

AWESOME! My gravy never had sausages in it and my husband requested I make one with sausages so I used this recipe and it was perfect! Even made it for hubby's b-day breakfast, on his request.

Sweet, Sticky and Spicy Chicken

LOVED IT!!!!!! Will be a regular for sure! I used low sodium soy sauce and only 1 tsp. of Sriracha hot sauce since my husband can't tolerate much spice. I also coated the chicken in flour and then seared til brown before adding the sauce. Next time I will add zucchini and cashews or peanuts to make it like kung pao chicken, only BETTER!

Artichoke Pasta Salad

I made it exactly as the recipes states and thought it was pretty good, but a little dry, even with the artichokes undrained. So I added about 2 tbsp of Roasted Red Pepper Italian dressing and it was perfect! I love it because it has no mayo in it like regular pasta salad.

Artichoke Chicken

It wasn't bad, but no one went back for seconds, and the leftovers just sat in the fridge until I finally cut the chicken up and put the whole mixture into a greek style wrap with olives, spinach, feta and sun-dried tomatoes. If I hadn't done that, I don't think the leftovers would have been eaten at all. I will not make this recipe again.

Broccoli Soup

WOW!!! I loved this soup! I am always looking for recipes that I can make low sodium because my husband has high blood pressure. So I made this as directed, except only using 2 cups low sodium chicken broth, and 2 cups 1% milk, and added some cayenne pepper and black pepper as well. It turned out AWESOME, and I just sprinkled a little salt on mine before eating. It came out very thick, and I actually added some extra milk in at the end to make it so we could dip our grilled cheeses in it. My husband doesn't even like soup and loves this recipe-- will definitely be making this again and again. Thanks!

JENNIE-O's Best Ever Meatloaf

Excellent!! I am trying to cut out as much salt as possible from my family's diet, so I made this recipe exactly as listed except for omitting the salt, using unsalted butter, and instead of ketchup, I used no salt added tomato sauce with a little brown sugar added to it. It was delicious and the left-overs were just as good as it was the first night. I highly recommend this recipe!!

Slow Cooker Chicken and Dumplings

I'm rating this recipe a 4 even though I absolutely loved the end result. That is because I made quite a few aditions to the recipe. First, I used 1 can cream of chicken soup and 1 can cream of broccoli soup. Instead of adding water I used a can of chicken gravy. I added 2 stalks of celery, 2 garlic cloves, 1 cup frozen corn, and 1 drained can green beans. I cooked on high for 5 hours, and the last hour turned it down to med. heat I mixed in the butter with 2 tbsp. flour to thicken. When I adde the biscuits (2 cans) I transferred to the oven to bake the rest of the way(My slow-cooker comes off the base and the pot can be transferred right to the oven). This was absolutely one of the best dishes ever, but I'm not quite sure if I would have enjoyed it as is. Thanks for the base recipe though!

Margarita Chicken I

I was very excited to try this recipe. I took other poster's suggestions and used just 2 cups margarita coctail and added about 1/4 cup tequila. I dredged the chicken in flour and grilled it in olive oil on a grill pan while bringing the sauce to a boil, then added the chicken to the sauce. It came out pretty good. I made it for company, which all complimented it. Still, I had hoped it would be a little better than it was. I will try it again after modifying a bit more.

Eggnog Cheesecake III

This cheesecake was FANTASTIC!!! I made it exactly the same as the recipe, except adding a little nutmeg and cinnamon to the crust. I took it to the small company I work for, and it was gone within 2 hours! I have been told I MUST make this again next year for sure. Thanks for a wonderful recipe.

Maple Walnut Fudge

This fudge came out perfect! The texture was not too soft and not too hard at all! Next time, I think I will add a little more maple extract than what the recipe called for though. Maybe 2 teaspoons or so. I could taste a lot of white chocolate from the chips still, so I think more maple would be better. This was a great recipe and I for sure will be using it again next year. Thanks!!

Tart Lemon Triangles

I made these in an 8" x 8" square baking dish to make lemon bars. They were excellent. I also used lime juice for key lime bars. Yum!!! I needed a good recipe for these since I have fresh lemons and limes from my trees all the time.
