Sweet Potato Pecan Pie by EAGLE BRAND®

I just got back from Thanksgiving dinner for which I made this sweet potato pecan pie. My sister in law brought cheese cake, cream puffs, cookies, and brownies, but guess what everyone was gushing about -- this pie! I was so pleased! When I say gushing I mean people were saying, "of everyone on this table, this pie is the absolute best. I have NEVER tasted anything like it!" It really was good. Not too sweet and hits the spot with a cup of coffee. Highly recommend!

Brazilian Black Bean Soup

My husband and daughter LOVED this soup. It had a really nice depth of flavor to it, unlike any other black bean soup I've made. I think this was due to the orange juice. This was wonderful; we had it with bread and it was a hearty, meatless meal.

Easy Garlic Broiled Chicken

I made this last night using bone-in chicken thighs with skin and followed the recipe as it was written. For me, the butter was just much too much. The thighs ended up swimming in grease. I made it for a first-time guest we had over and wished I had made something lighter. It was a greasy meal.

Fast and Friendly Meatballs

Made this tonight. To say it was a hit is an understatement. The meatballs came out light and tasty. I added a few squirts of worcestershire sauce, crushed red pepper, and garlic powder (I'm sure it didn't need all that, but I can't help dressing recipes up!). This is a solid basic recipe, I will make again. Thank you, AnastasiaJane!

Mock Tuna Salad

I have to say, this really did taste like tuna fish. I've been concerned about the mercury in tuna, so this is a great alternative. My family won't go near it, but I love it and am enjoying it right now on celery. It's filling and tastes, to me, like tuna. I think the reason I eat tuna fish salad (as we Americans tend to eat it, slathered in mayonnaise) is for the texture and creaminess. These are recreated perfectly here with the garbanzo beans. Delish! Will make again.
