Best of the Best Blueberry Muffins

Reviewed: Sep. 20, 2007
My muffins just got out of the oven and they taste great. They taste even better than the lower fat pumpkin muffins I made and reviewed. I made the following changes: I used applesauce instead of butter 1/2 cup Splenda & 1/2 cup brown sugar 2 egg whites 1/2 cup skim milk 3 Tablespoons of Vanilla Extract I did not sprinkle sugar on top The muffins taste great for a lower fat, sugar, cholesterol muffin. I'm glad they don't taste any better cause it would be hard to have just one. Now that I have this recipe, I will never again buy a muffin at a coffee shop. THANK YOU.

Big Al's K.C. Bar-B-Q Sauce

Reviewed: Apr. 6, 2008
I've been grilling ribs and chicken everyday since I found this recipe. The changes I made: no tomato sauce, I used white vinegar, honey instead of molasses, and added 1/2 teaspoon of dry mustard to the sauce. I also make a rub for the meats and marinate for 24 hours in foil before basting with barbecue sauce. Kansas City Rub 1/4 cup brown sugar 1/4 cup sugar 1/4 cup or less salt 1/4 cup paprika 2 Tbspn garlic powder 1 Tbspn chili powder 1 Tbspn onion powder sift ingredients and rub on meat

Carrot Cake III

Reviewed: Apr. 25, 2008
UPDATE: Made carrot muffins and used whole wheat flour, Splenda brown sugar blend, all applesauce (no oil, no walnut) and egg beaters. AWESOME. Just as good and will make again. Thank you. Changes I made: used half oil and half applesauce, white and brown sugar, 8 oz crushed pineapple, walnuts in cake only. I reduced the sugar in the frosting to 2 cups and it was perfect. It was very easy to make and it tastes great. Thank you.

Asian Orange Chicken

Reviewed: May 15, 2007
I breaded and fried chicken cutlets and set aside. I made the sauce and left out the green onion, rice vinegar and ginger. I did add more orange juice. I poured the sauce over the chicken and garnished with orange slices. Awesome! Thank you.

Banana Banana Bread

Reviewed: May 22, 2008
Changes I made: used applesauce instead of butter, Splenda brown sugar blend, and 1 cup white/1 cup wheat flour. Not bad for a healthier version, but I'd stick to the original if I was entertaining. Thank you.

Rempel Family Meatloaf

Reviewed: Jan. 17, 2007
I left out the steak sauce and used saltine crackers instead of Ritz. I've never used onion soup mix in a meatloaf and I have to say I was pleasantly surprised. It made all the difference. Loved it. Thank you.

Chicken Marsala

Reviewed: Jan. 3, 2007
I used parsley instead of oregeno and didn't use marsala wine. I used Pastene Cream Sherry only. You can find this particular sherry at some liquor stores. The marsala was fabulous! Thank you.

Southwestern Egg Rolls

Reviewed: Jun. 15, 2008
I can't believe I made Southwestern Egg Rolls and they taste good! I left out the chicken and didn't measure anything. I also used traditional egg roll wrappers and it worked out perfectly. Baked 12 minutes per side at 425 degrees with Pam Cooking Spray. They're nice and crispy. Thank you for the recipe. Will make again.

Gourmet Sweet Potato Classic

Reviewed: Oct. 30, 2006
I made this side dish for a dinner party I had last night. Not many people ate it, but I'll have to assume they didn't like sweet potatoes. I don't particularly like sweet potatoes either, but I had to try it because of the reviews. It was wonderful. Thank you. I will make this again, especially with the holidays coming up.

Apple Stuffed Chicken Breast

Reviewed: Sep. 15, 2006
I simplified this recipe and it still tastes great. I breaded the chicken breasts and filled it with one slice of cheese, thin pieces of apple and pepperidge farm stuffing. I rolled the chicken and put it in a baking pan with chicken broth. (add seasonings to chicken) Baked in oven for 35-45 minutes. Thank you.

Chicken Garlic Pizza

Reviewed: May 3, 2006
I melted the butter, garlic and herbs, but didn't wait until it hardened in the fridge. I just let it cool off and then spread the (liquid) butter onto the dough. I also used red onion, omitted the cilantro and sprinkled with fresh basil. Everyone loved it. Thank you.

Farmhouse Chicken

Reviewed: Nov. 4, 2007
I purposely altered this recipe to better suit my taste and because I was half asleep when I found the recipe this morning. :o) I used the meat from a rotissere chicken, frozen vegetables and cheddar cheese. I didn't use any salt, but I think it needs just a tad. I made this for the guy I'm dating and we both loved it. Thank you. Will make again. Go Pats!

Cream Cheese Pound Cake I

Reviewed: Nov. 7, 2007
My pound cake just came out of the oven and it tasted great. It tastes sweet with a hint of vanilla. It's a firm pound cake and a crispy top. I didn't use almond extract and I don't think the cream cheese made any difference. Thank you. I will make this again.
