Grilled Stuffed Swordfish

Not enthused by the marinade. A bit too "tangy" for our taste. We totally love arugula - which is why I tried this recipe, but was total overkill on the marinade and the stuffing. =( Don't know what I might have missed on either..

Crab Crusted Grouper

Excellent. Made exactly as written, however had to use flounder as market was out of grouper. Based on some other reviews worried that the jalepeno may make it too spicy but was not the case at all. Could have added even more!

Fettuccini with Mushroom, Ham and Rose Sauce

This was very good! Was skeptical about ham in a tomato based sauce, but totally worked. Did not have cream so used milk and thickened at end with a little cornstarch and water.

Halibut with Zesty Peach Salsa

Very good. Fish was a bit bland, so next time might add some cilantro to the marinade. We ended up cutting the fish up after grilling and putting in tortillas with the salsa, but son ate it with just the salsa on top. Both ways were very good.

Italian Bread Using a Bread Machine

Wonderful! Hubby raved about the flavor... a true italian bread, nice and dense not too fluffy. I would recommend as others have suggested to make one loaf rather than two. They did not rise enough to make two significant loaves, and I think would be better as one... will try that next time!

Blueberry Buckle

This is very good. Dont need to bother with changes mentioned here. The batter is very thick, but that's how it is supposed to be. I only had a dark pan so had to lower oven and cook a bit longer. Next time I'll find a different pan. Otherwise is great!

Grilled Lime Cilantro Ahi with Honey Glaze

VERY VERY Good. Even though we overcooked by a min or so was still moist. If grilling suggest 3 min per side, then glaze for 1 min per side and you are good to go. YUM!

Chicken Tortellini Soup

Great! Fast and easy! I bought a store roasted chicken and pulled the meat off to use. Since there was so much I added a couple of extra cups of broth. Also used one can drained diced tomatoes and had some fresh baby spinach so chopped some of that and threw it in. I did add a small amount of onion and garlic powder, but otherwise that was it. The whole family loved it!

Excellent! Did not have pearl so used chopped onion. Also used stock in place of the water. Parsley is optional in my opinion. I forgot to add it once and it wasnt missed.

Rockfish with Crab and Old Bay Cream Sauce

If Rachel Ray made this dish she would say "Yum-O". It was great. I had no dijon so used 1/2 t. of dry mustard. (cookbook said use about 1/3 of dry to prepared mustard.) Only other change I would make was a touch of s & p or a splash of chicken stock perhaps to add some depth. We grilled the fish and made the sauce separately.

Blueberry Muffins II

These were very good and easy to make. I had one small container of blueberries left over from something else so had to cut the recipe in half. It still worked out great. It made 9 muffins, but I thought they would have risen more... otherwise I would have cut back to 7ish to make them all a bit larger. Kids loved them regardless and they disappeared quickly! As other reviewer suggested I did add some applesauce and a small amount of vanilla, Thanks,

Rosemary Chicken with Orange-Maple Glaze

Actually a 3.5 as is. It was too mapley! I would make again and cut back on the maple syrup, maybe add orange zest to cut it? Basically good, but need to cut the sweetness. Grilled the chicken rather than fried, don't know if that made a difference, but added a small amount of rosemary, pepper and salt as it would have mixed in if fried.

Veal Angelica

EXCELLENT! A bit of work, but can be made ahead then cooked when ready. The sauce is wonderful and could be used in other ways. One short cut I have used is to lay the Aspar., etc in a layering to cook rather than making the packages. Saved some time, but both ways are excellent

Pork Medallions with Cherry Sauce

There is a similar recipe on the food network site, Ellie Krieger's show. Doesn't matter where it came from however, as it is EXCELLENT. The only change I made was I doubled the sauce, and added about a teaspoon of sugar (give or take, I didn't measure) to the sauce at the end to cut the tartness. The entire family loved it! It was fast, very simple and looked fabulous. Would be excellent for entertaining!

Bacon Mushroom Chicken

Very tasty, and made for a nice presentation. Used microwavable bacon so that it would crisp up better. Also used 1/2 and 1/2 instead of cream in the sauce and thickened with just a bit of cornstarch.
