The Best Chicken Soup Ever

Despite being married and having three children, I never made chicken soup before. I hadn't even so much as bought a whole chicken. But the kids were sick, and with stroke of genious, it hit...Aha! Make chicken soup! So, off to store we go, sick, crabby, "I don't want to ride in the cart" 2 year old and the baby, secure in the sling. I look for and find some chickens. They look smaller than I thought. I look through all 50 of them, looking for the biggest one. They are all about 3 pounds. So I ask an employee where the regular sizd chickens are, you know, the turkey-sized ones. Well, chickens, as it turns out, are not as big as turkeys, and the employee laughs. Ok, so now I have chicken, and I leave store. I call grandma on the way, asking what to do with it. She tells me to clean it. Ummm....how? She tells me, and I respond, "I stick my hand up WHAT???" That's not somewhere I'd like to touch. Grams reminds me its just a chicken, I can wash my hands later. Ok, big breath. I can do it. I clean and cook chicken. I cool it, bone it (ick) and then make soup. Now, to rate this recipe....its great! I've gotten over my fear of whole chickens, and I'll make it again! I did add garlic, peas, and spinach to boost the nutritional value. I didn't add the chicken soup mix, wanting it to be natural as possible. All in all, great recipe. Thanks for sharing it and helping me get over the hurdle of whole chickens!

Vegan Split Pea Soup I

I LOVE this recipe! I make a double batch of this soup for my friends when they have new babies, some of my friends can't wait to give birth so they can get some more from me! Here are a few of my alterations-I ommit the celery, use a few cups of chicken broth in place of a bit of water, and add the spices after the first boil so the flavor can grow and infuse as it cooks. Also, I start the soup first thing in the morning so that it simmers for 8-10 hours before supper. It really is a great recipe and it freezes well for a couple of months. Thanks Deborah for sharing this great recipe!

Rosemary Chicken Stew

VERY good! A friend and I exchange meals once a month and this was a hit with both our families. Even the kids liked it! I didn't use all the chicken it called for, for a double batch I used about 3.5 pounds. Also, I let it simmer most of the day. This recipe is very good! I served it with a balsamic vinegar green bean salad and garlic biscuts, and topped meal off with some chocolate cookies! Yummy!

Classy Green Bean Casserole

I made this as written tonight for my mother in law's birthday dinner. It wasn't until just now that I saw the note saying it should only be 1/2 cup of sour cream. I did think the 1cup was a bit much, but everyone liked it a lot. Next time, I will try 3/4 cup. A nice alternative to the traditional fried onion casserole. Will make it again, might even replace the fried onion version. Thanks for sharing!

Triple-Cheese Macaroni

Very nice, thick and creamy. I only added half the pepper. Our whole family loved this, and our six year old exclaimed, "Mama, your macaroni and cheese ROCKS"! I will make this again! Very good!

Good Ol' Alabama Sweet Tea

GREAT tea! I use a little less sugar than called for, just a personal preference. Others have given a less than perfect review because of the amount of sugar called for, but its totally a personal thing. Some people like regular soda pop, some like diet. Some people like candy bars, some don't. This is a great recipe! Use your own judgement. You know if you like things sweet or not! :)

Savory Grilled Potatoes

I made this tonight to go with a fresh strawberry green salad, corn on the cob, and brats. I used onion and garlic powder, and dried parsley. They turned out great, and I'll make them again. I did use 8 potatoes and just used four times the amount of ingredients.

Baked Omelet Roll

I made this for dinner tonight as we do not eat meat on Fridays during Lent. I followed recipe as written, but added fresh diced tomatoes. The omelet baked up so thick that I oould not even roll it. So, it was more like an egg bake. I only rated this one three stars.

Apple Crisp IV

I made this for dessert tonight and it is pretty good, however, it is a little dry, which explains my stars instead of five. Next time I will add just a tiny bit of unsweetened apple juice to the apples. Not much, maybe just a 1/2 cup or so just to see if I can get it a little less dry. Other than that, this is a great recipe and I will not look for another! By the way, I used about 15 apples, a mix of cortland and jonagold apples.

Ham Salad Spread

Great! I didn't measure the ingredients, but I know I had more ham, so I used more mayo and mustard, and I used dill relish instead of sweet. The only negative thing about this, and it is just a nit-picky thing, is the color. It turned a strange shade of pink/gray. I've made ham salad before and not had that problem, so perhaps it was just the ham or something this time. Despite that little thing, I would make this again in a heartbeat. We had it on sandwiches, and all of us enjoyed it, especially our young children. Thanks so much!!

Roasted Pork Loin

I made this for dinner tonight but used minced jarred garlic from the fridge. The roast dried out, I had to add about 2 cups of water during baking time. I only baked for about 1 hour 40 minutes and it was 180 degrees. I would probably make this again, but I would use a crockpot and simmer all day.

No Bake Cookies III

Our 6 year old kindergartener and I made these last night as an end-of-the-school-year thank you for his bus driver and teacher. I thought they were runny as I stirred them, so I added a bit more oatmeal. Ooops! That made them too crumbly. I gave this recipe 5 stars because I think they would've turned out if no for me messing them up. I will make this recipe again, following as written.
