Vegetable Beef Soup I
This is the best vegetable-beef soup I have ever had. I live alone and made a big pot and froze what I didn't eat in individual servings. When I put it in the microwave, to defrost and heat, it was just as good as when I first made it. I substituted V-8 juice for the tomatoe juice and Thyme for the Basil. I also added a little crushed red pepper and some granulated Beef Bouillon to boost the flavor. This is a permanent recipe in my house.

Lemon Pudding Cake I
I just made this pudding cake and it was fantastic. I only used 1 cup sugar and for the milk added 5 tablespoons instant nonfat dry milk and the 1-1/2 cups water. I also added all dry ingredients at the same time then just dumped the water on top and mixed it up. I baked it in a 2-quart casserole. The finished cake was a lovely angel food cake on top with a creamy lemon filling on the bottom. Delicious!

Salmon Loaf
There was nothing about this recipe I didn't like. It was quick and easy with a minimum of ingredients, though I did add some minced onion, dash of salt and a little pepper. It made a wonderful salmon loaf just like my Mom used to make. My grandkids, ages 4 through 16 loved it served with creamed peas and fried potatoes. I will be using this recipe from now on.
