Cauliflower Casserole

Thought I would love it but just didn't find it worth the expense. Bland as others stated. Kids did not like it at all.

Easy Spinach Lentil Soup

I used lentils for the first time in this recipe. A word of caution...if you use red lentils, reduce the cooking time. Red lentils take the shortest amount of time to cook. My soup came out mushy. Next time maybe 25 minutes with red lentils in it.

Creamy Corn Salad

Very good. However I used FRESH dill from my garden because I didn't think the dried dill would come through unless it had been sitting in the mayo for at least an hour or two to get the flavor out. Very good with much LESS mayo than indicated. Just a spoonful until it's coated and then it's great!

Holly's Chocolate Chip Cookie Dough Dip

Yes, add the extra brown sugar and then sandwich it between 2 vanilla wafers. Chill it overnight and then you'll have mini cookie dough cheesecakes!

Slow Cooker Chicken and Dumplings

To die for. I added some frozen veggies (peas, carrots, corn) to make it more like a pot pie and it was fabulous. Not great left over though...it will solidify.

Pumpkin Casserole

Fabulous recipe. I don't like pumpkin pie but this was like having a crustless, tastier pie! I loved this recipe as did my son who won't eat any fruit or veggies. Great way to get the nutrition of pumpkin in them. I didn't have evaporated milk so I used regular and just cut back a little and it was fine. Almost souffle like. I also added a pinch of nutmeg and cloves. Definitely a great recipe for Thanksgiving too.

Ricotta Cake

Although my guests and my son (6) enjoyed it as a birthday cake, I expected more. I did not reall all the reviews and did not realize the ricotta would fall to the bottom. Also, it says to drop it by spoonfulls into the cake. I found that very difficult to do since 2 pounds of ricotta mixed with the eggs is enough to fill 1/2 of a 9x13 cake pan on it's own. And also, the recipe should also say to add the extra number of eggs as required for the mix. I had 5 eggs on hand and the recipe called for 4. But the cake mix called for 3 on it's own so it was really 7 total.

Chocolate Cavity Maker Cake

Very good, moist and very dense. For the holidays, I made one with french vanilla cake, white chips, amaretto and put a few dollops of cherry pie filling on the top with sliced almonds. It was a HUGE hit!
