Everything in the Fridge Roasted Vegetable Pasta Sauce

Chocolate Mice

I made these for my daughter's preschool Christmas party, and they were the only thing on the table that was completely gone and they went the fastest! They were awesome! I used greek yogurt because I didn't have sour cream....and it worked out great. You can taste the yogurt though- so if you aren't a big fan don't sub it:) Great recipe! The kids still ask for them, and they were soooo cute:)

Shreddies Ooey Gooey Popcorn Treats

I just made these for a group of kids I take care of. Except I didn't have Shreddies (oops) so I used Strawberry All Bran Bites...and I added a dark coco powder into the peanut butter mix (as well as 3 tbs of sugar because I use natural peanut butter). The kids love them. I'll make these again:)

Fluffy Pancakes

We make these all the time. Sometimes with blueberries other times bananas and chocolate chips...always fluffy and delicious. I even sub in half the flour with a mix of flax, whole wheat and wheat bran, (and often times triple the recipe) and they're still light.

Smothered Chicken Breasts

I LOVED this! I did change the order of how I cooked things though. First I crisped diced bacon in my cast iron skillet, strained, threw in my onions until brown. Then I threw in a ton of mushrooms (with a bit of butter) until golden. Then, I threw in the chicken breasts and cooked on one side until that side was nice and crispy. I flipped the chicken, threw everything on top (including cheddar cheese) and baked at 450 for 20 minutes. OMG, it was amazing! Too unhealthy to eat all the time...but wow, next time I have my in-laws over, I'm making these!

Butternut Squash Bake

I used a dry crumble feta with whole wheat bread crumbs. First time my boyfriend has EVER loved squash. It was sooo good. I'm totally adding this to my regular side dish rotation.

Cheddar Beef Enchiladas

Whole Grain Waffles

These waffles are amazing! My dayhome kids go crazy for them- we now have "Waffle Friday" every week. I always make extra to toast on the weekend for an easy breakfast.

Banana Pancakes I

I use this base everytime I make banana pancakes now. It's great as is or if you want to get more nutrition out of them...you can always sub in half of the flour for whatever you want- (I doubled the recipe so I used) 1/2 cup of whole wheat flour and 1/4 cup of ground flax and 1/4 cup of wheat bran. You can also sub in different things for the milk. I used 1/2 milk and 1/2 apple juice. I also added in vanilla and nutmeg and they were awesome. Great recipe. Great banana flavour!

Best Big, Fat, Chewy Chocolate Chip Cookie

I've made this recipe around 10 times and everytime it is perfection. Today I tried using all whole wheat flour and I couldn't taste the difference. I usually skip the white sugar- this recipe is sweet enough. I half the chocolate chips as well- sometimes I add dried bing cherries or peanut butter chips. These cookies always turn out moist (I bake for 13 minutes) and they are the only cookie I've made that hasn't spread. This is the perfect recipe- way better than my local bakery.

Fluffy Canadian Pancakes

I added 2 tbsps of splenda, one of vanilla, and sliced a very ripe banana and folded it in and these pancakes were amazing. They didn't look great- I gotta tweak that a bit but wow, easily the best and easiest pancakes ever. Thanks so much!
