Watermelon Fire and Ice Salsa

Very interesting, and very good. I used half a red bell pepper, and half a green bell pepper instead of the one the recipe calls for b/c I didn't want it to be overpowering in spiciness. Very good-used freeze-dried cilantro b/c that's what I had on hand, and it was well-received. My sister loved it b/c, as she stated, "it doesn't have the density of tomatoes in a regular tomato-based salsa."

Grilled Rock Lobster Tails

Very good, however, all that oil is not needed. We used 1/4 cup of oil, added a tbsp. more of lemon juice, and I used garlic pepper instead of white pepper, since I didn't have any white pepper on hand.

Prosciutto Wrapped Asparagus

Delicious, and so easy to prepare. This recipe is a true star, and adds an element of simple elegance to any entree. I served this asparagus w/filet mignon. Yum!!!

Connie's Zucchini "Crab" Cakes

Chicken Cordon Bleu I

Awesome! My husband and I loved these breasts. I used about and egg and a half to moisten the chicken before dipping it into the breadcrumb mixture. I didn't use a sauce-I felt that it didn't need one. I shredded extra swiss cheese and placed it on top of the chicken, and the last ten minutes of baking, I added a tsp. of butter to each breast. I also used 2 pieces of smoked ham per breast instead of one. The end result was fabulous.

Jalapeno Popper Spread

YUM!!! As others suggested, I baked this dip in an 8x8 pyrex dish instead of microwaving it, and the parmesan cheese gives it such a wonderful crust. I added about an ounce more of jalapenos than the recipe called for, but that was the only change that I made. I made this for Thanksgiving, and again for a cookie exchange. My one friend loved it so much that she made it last weekend, and now we're fighting over which one of us will bring it to the next event!!!

Omelet in a Mug

5 stars for simplicity! I just put a cut up slice of American cheese in there instead of cheddar. It is so simple and delicious. My husband said that the taste is restaurant-quality!

Red Garlic Mashed Potatoes

Csn I just say that these are absolutely phenomenal in taste, and so darn easy to make? They make me never want to have to use the instant potatoes again. The steak seasoning really helped give these potatoes extra kick. Loved it!!!

Ranch Burgers

These were good. I didn't taste the ranch flavoring so much, but they were moist, which was a huge hit w/my extended family that came over for a barbeque. They thought the burgers were outstanding; I guess I was expecting a bit more of the ranch flavor to come through.

Grilled Zucchini II

5 stars for flavor and easiness. I sliced my zucchini in spears (they looked like pickles), and after bringing them inside, I topped them with some grated parmesan cheese while still hot. The parmesan on top is a wonderful addition!

Mushroom Stuffing Balls

This tasted very good. I thought the batch felt extremely dry after using the required amount of breadcrumbs, so I had a half brick of light cream cheese left over that I added to the batch to make it less dry. I also added about a 1/2 cup of cheddar cheese to the recipe. My husband enjoyed them very much, and since I have some of the batch left over, I'll add some horseradish to them for some extra kick!

Insalata Caprese I

Super easy and super delicious. I agree w/previous reviewers' posts about using more EVOO and less balsamic vinegar. I used twice as much oil than vinegar. I added about a tbsp. of garlic pepper and a tsp. of sea salt. After sitting overnight, the next day's leftover batch tasted even better! If you have the chance, let it sit overnight.

Cheesy Potato Salad

This is very good. I used the same amounts of sour cream and mayo, as previous reviewers advised. I omitted the sugar altogether, added about 2 tbsp. of fresh chives, and I halved the amount of cheddar cheese called for. I used 2 tbsp. of artificial bacon bits (all I had on hand), and I added about a tsp. of Nature's Seasonings. I know that I did some major modifications, but this is a great base recipe that I will use over and over again!

Chocolate Cavity Maker Cake

This recipe is a standout. My sister (who's a sweet freak)and her family loved this cake. My parents and hubby loved it as well. I loved that it is so extremely moist. The only thing that I need to mention is for you to MAKE SURE YOU LET THE CAKE SIT IN THE BUNDT PAN FOR AT LEAST AN HOUR and a half BEFORE TRYING TO EXTRACT IT. I tried extracting mine after 45 minutes, and it almost split into two. I topped it with Easy Chocolate Bundt Cake Glaze from this site, and freshly sliced strawberries from my garden. This cake is so impressive, my husband requested that I make it again for his boss's 4th of July party!

Taco Dip I

Very good. I used low fat sour cream and cream cheese, and it turned out excellent! I also added about 2 tbsp. taco sauce to the creamy mixture for extra kick. I omitted the pepper based on personal preference, topped it with some green onion as well. The guests loved it, and what a great presentation it made!

Yummy Honey Chicken Kabobs

The sauce to marinade the chicken in is outstanding. I also used button mushroom tops, as well as grape tomatoes to liven up the array of vegetables offered. I added a little more honey and a bit less soy sauce due to personal preference w/sodium, and I allowed it to marinate for about 3 hours. This is a keeper.

Sausage Stuffed Mushrooms II

These are awesome! I added some chives and chopped up about 3 green onions and added that as well. My husband thought that he died and went to heaven. I didn't broil them for fear of charring them, so I baked them at 350 degrees for 20 minutes. Did I mention how easy they are to make as well? Total gourmet flavor! They're so good that I'm making them again tonight!

Chicken Marsala

Yummy. I used a little over 1/3 cup of flour to bread the chicken, and what I did was I placed the 4 chicken breasts in the flour/seasoning mixture, saw that I had a lot left over to use, and I sprayed the coated breasts with Parkay spray butter, then recoated them to use up any excess flour. I used garlic pepper instead of regular, and I used about 1/4 tsp. of Nature's Seasonings. Also, I added about 3tbsp. of half-n-half to wine sauce, and about 2 tbsp. of flour to thicken the sauce up. I added the flour before the mixture became to hot, as the flour will clump up if you stir it in while the sauce is boiling. Based on these modifications, the entree was delicious.

Cream of Fresh Asparagus Soup I

This is very tasty. I added about 3-4 tbsp. of white cooking wine to enhance the soup's flavor, and since I didn't have white pepper on hand, I used the standard black pepper. I also used approx. 1/4 cup of half-n-half (in lieu of some of the milk) to give it a rich texture. The end result was fabulous. Hubby and even my baby daughter (she had about 2 spoonfuls) really enjoyed it!

Fried Morel Mushrooms

Yum! I used regular, thickly sliced mushrooms and this was great. I didn't have saltines on hand, so I used reduced fat Keebler Club crackers. I also added some garlic pepper and garlic salt to the cracker mixture. This turned out awesome. I served w/ranch dressing.
