Coconut-Cream Cheese Frosting

This recipe is fantastic. Like many mentioned, I used a little less sugar. Instead of using heavy cream, I substituted the same amount of cream of coconut. I'll be completely honest - this frosting whipped up to a consistency that is very similar to that of store bought frosting. It's amazing. You could use some milk and another flavor - goodness - the millions of opportunities with this icing. This will now be my go-to recipe. It's fantastic.

Lazy Lasagna I

My family loves this recipe. I normally double it and freeze the second batch for a quick dinner later. DH doesn't care for all that sausage, so I normally substitute half ground beef and half sausage cooked together.

Chicken Spectacular

I've had a recipe similar to this for years. Thanks to the amazing Uncle Ben's Long Grain and Wild Rice Fast cook box - this takes next to no time to throw together for dinner. My family are big on the green beans - so to combat the 'too creamy' complaint, instead of cutting back on the mayo - we throw in an additional can of green beans and omit the pimentos. We also saute the onions with some fresh mushrooms until the onions are clear through. Always a hit in our house.

Pecan Pie V

I used a shortbread crust and cut the cooking time down to about 45 minutes. When I put the pecans in, I put 3/4 cup of them in the mix, then spread another half cup or so over the top. Then, I added a handful of Hershey's milk chocolate chips to the top of the pie. Everyone loved it and have repeatedly requested the recipe. I have to make it for our Christmas potluck at work.

Best White Icing Ever

I love this recipe. I've modified it using Cherry Extract and Almond Extract. It's easy to color and tastes amazing.

Teriyaki Chicken for the Busy Cook

I made this with a whole cut up chicken I bought from the store. I had to cook it a while longer, but it was really juicy. I baked it covered as was suggested and also added some minced garlic, grated ginger and diced up green onion to the mix. I think next time, I might try to make the sauce a little thicker so it sticks to the chicken versus the chicken just cooking in it. The sauce definitely made a good add in to the rice I served with it. Definitely one I will try again! Thanks!

Vanilla - Chocolate Powdered Sugar Frosting

I was looking for an icing recipe that I could adapt to make some 'mini-monster' cupcakes for my daughter's class at school. This turned out AWESOME! I needed a recipe that wouldn't be TOO sweet because there is a lot of icing on the cupcakes. This worked out perfectly. Everyone raved about it - and it sets up nicely so that they didn't have the messy icing all over their fingers from eating it. Thanks!
