Vegetable Medley I

After reading all of the reviews, I was expecting an incredible veggie dish, unfortunately it was just ok. It has a lot of potential to be great, but it needs more spices and lots and lots of cheese. Also, mine was very watery and I think the can of tomatoes has to be drained. I added double the amount of parmesan she called for, but I felt that I needed more. Whenever I got a little bite of that cheese, it was yummie. Next time I will layer in the cheese to the whole mix.

Double Tomato Bruschetta

I want to give this recipe 10 stars! It was umbelievable delicious. This is something I would expect to get in a good restaurant. I have to admit that I was a bit skeptical about the sun dried tomatoes because it did not look appetizing, but WOW, it tastes awesome with the other ingredients. I chopped all the ingredients into small pieces, I know the recipe did not mentione it for all of the ingredients, but I think it works better. I made it for 2 servings and that yielded 3 slices of bread toppled with the zesty tomato concoction. I served it for myself for lunch with some soup, yummie! I can't wait to share this appetizer with someone. Thanks Loll!!!

Jamie's Minestrone

This soup is very yummie tomato based soup. I added 1 shot of Worcestishire sauce like other reviewers mentioned and it spiced it up, excellent idea. Since I did not want to eat it with pasta, I just added 2 cubed smaller potatoes into it after the liquid came to a boil and I used veggie broth instead of chicken to keep it 100% vegetarian. I cooked it for 1 hour after all ingredients were in there but the carrots and the celery could have cooked longer. They were eatable but had a slight crunch to them. Maybe next time I have to chop them into smaller cubes. I also cooked it on medium low after boiling because I just wanted it to get done faster. I think if I cooked it for 1.5 hours it would have been perfect. Next time I will add the parmesan cheese at the end. This soup uses up a big pot and I definitely will have to freeze a lot of it, but that's ok, at least I don't have to make it from scrach for a while. I highly recommend this soup. Enjoy!
