Pumpkin Casserole

My husband loved this but I was disappointed. I expected a 'pumpkin bread' but it's more like crust-less pumpkin pie. It's very easy to make!

Asian Salad

This is such a yummy salad (though not very healthy) I substitute sesame oil for the butter (about 1/4 c) and olive oil for the veg oil. I also add a little more soy sauce. Mmmm!

Spicy Polynesian Wrap

These were awesome! I added curry, cumin, garlic and chicken stock to the rice (jasmine rice) which enhanced the flavors of the chicken. The sweetness of the coconut mixed with the other flavors was so delicious!! I also served this with a Thai ginger soup that used the coconut milk instead of throwing it away.

Make Ahead French Toast

This is basically a cross between bread pudding and caramel rolls. It is delicious! but, how can you go wrong with cream, sugar and butter!

Bread Pudding II

This was fabulous. I did add cinnamon and it needed to bake for over an hour, but smothered with whipped cream, it's delicious!

Big Soft Ginger Cookies

Apple Crumble Pie

Coconut (Haupia) and Chocolate Pie

I was really excited to try this pie based on the great reviews. However, I was a little disappointed. It was really easy to make, and the layer with the chocolate was good, but the white layer was really overpowered with all the cornstarch, I thought.
