Baked Mushrooms

Thanx for a quick and easy recipe but truth be told, I wasn't too crazy about the results. Too watery & not very tasty. I was hoping that the flavor would makes it's debut the next day, but that wasn't the case unfortunately. On the plus side, my whole kitchen smelled yummy.

Pan-Fried Asparagus

This is so good that although I think I'm making enough for a couple of days, there are never any leftovers the first time around. I've already made it twice in the last 4 days. Thanx for the quick and savory recipe.

Fasoliyyeh Bi Z-Zayt (Syrian Green Beans with Olive Oil)

This recipe is very easy to make and has a very unique taste. I've ALWAYS hated hot green beans but these are yummy. I didn't change a thing to the recipe, although I may add cooked chopped onions the next time.

Wow, I can't believe how close to my mom's beef stew this came! Very fast to put together. My husband complemented how flavorful it was. Only changes I made were that I first seared the beef on the stove (lightly seasoning the beef and coating with flour first--which helps to thinken the gravy), and I used low sodium beef broth in place of the water. My 6 year old is already requesting me to make it again soon.

Honey Barbecued Spare Ribs

Awesome. I tried this recipe since I had never attempted to make ribs before and my husband loved them so much that I'm making them again tonight! Very easy, fills the house with a great aroma. I sprinkled salt and pepper on the ribs before baking. I also doubled the recipe for the glaze and after baking for an hour, brushed glaze on the ribs every 10-15 minutes for a total of 45 minutes. Thank you for this delicious recipe!!!

Pollo (Chicken) Fricassee from Puerto Rico

This recipe is right on. Reminded me of my mom's recipe. My only changes were: 1) added 1/2 can (4 ounces of tomato sauce) 2)used sofrito (check out recipe on this site and omit the tomatoes, salt, and pepper) in place of the cilantro, peppers, onions, and garlic. I thought the it was very flavorful but although my husband liked it a lot, he felt it lacked a bit of salt. So, for those who think it is bland, just adjust the salt/sazon/adobo to your taste because this recipe is a definate keeper! By the way, I made this awesome recipe in the slow cooker and also in a pressure cooker and got awesome results all the time. My 6 year old daughter is amazed by the fact that the meat literally fell off the bone and left it dry. Thank you for a great recipe!

Puerto Rican Pork Roast

This recipe reminds me of Christmas Eve family gatherings thrown by my parents!! Excellent. I added 1 tablespoon of white vinegar (as per my parents' way of cooking it). I didn't change any of the ingredients but I have a great way of cooking it that I adapted from my parents. The pork should be cooked 1/2 hour per pound (10 pounds = 5 hours)--Cook with the fat side down in a covered roasting pan for the first half of the cooking time, then uncover and cook with the fat side up for the second half of the cooking time. It'll turn out moist, very well cooked (which is extremely important when cooking pork!) and the fat side will be nice and crunchy, which, coming from a Puerto Rican family myself is the part that most people covet!! Enjoy everyone, and THANK YOU for an awesome adaptation of a family staple!!!

I did just what the recipe said and although I would love to rate it higher, I really didn't get the rave reviews that others have. It was OK but bland. Thanks for the recipe just the same, it seems lots of others really enjoy it!

Baked Teriyaki Chicken

I can not say enough good things about this recipe. My only changes were to substitue Splenda for the requested sugar (I'm low-carbing and this made it allowable!), and I omitted the ginger (due to personal preferences only). This was soooooooooooooooooo good that when my husband came home from work the next day, the first thing he asked for was left over chicken and he wasn't too thrilled when I told him I had taken some for lunch :o)--trust me, my husband is very finicky and he has asked me to make this regularly!! This is officially a staple in my recipe box. FYI: 12 packets Splenda=1/2 cup sugar and you won't even notice the difference. Excellent sweet tangy taste!! No after-taste (and I used regular Splenda, not the "for baking" splenda!) Thank you soooooooooo much for such a quick and yummy recipe that I will be sure to pass down to my kids!

Spaghetti Sauce

If my husband had anything to say about this rating system, I would give this recipe 10 stars. I was really truly impressed at how great this tasted. I made a bigger batch of this by adding 14 ounces of crushed tomatoes and adjusting the listed spices accordingly. I also used Splenda in place of the regular sugar. It was soooooo good that the next day, my husband insisted that I cook more pasta so that he can use the leftover sauce (which was plenty and is freezable). Courtney, thank you soooo much for such an awesome-tasting and quick/easy recipe. This is one of those recipes that will be used every week and I'll make sure to teach my kids how to make this once they're a little older. :o)

Smothered Green Beans

I really loved this recipe. I used frozen green beans and therefore I omitted the water, but I'm sure it'll taste that much better using fresh green beans. I chopped bacon into small enough pieces so that every biteful would have bacon in it. As a low-carber a good side dish is hard to find and this recipe makes sticking to the diet that much easier. Thank you for this great recipe. As a matter of fact, I'm making this again tonight! Bon apetit.

Irish Heritage Cabbage

This recipe was really tasty and easy to put together. I love that I'm able to enjoy it as I low-carb diet. I add extra bacon (because I love the stuff) and omit the nutmeg (strictly personal preference) and it was still yummy. I'll be making this on St. Patty's day with potatoes and corned beef. Thank you for a great tasting and easy recipe!

Mushrooms with a Soy Sauce Glaze

I have tried just about every single mushroom recipe in this website and this one by far blows all of them out the box!! I loved it so much that I ate the whole thing almost by myself. My daughter doesn't even like mushrooms and was fighting with me for some more. I just returned from the supermarket with 4 more packs of mushrooms just so I can make this again. If I could give this recipe 10 stars, I certainly would. No need to change a thing, PERFECT AS IS!!!! Thank you soooooooooo much for an easy, quick, healthy and delicious recipe. This has officially become a staple in my recipe box!

Soft Oatmeal Cookies

Its not right to rate these cookies 5 stars when they actually deserve at least 10 starts!!! Super easy to make, very soft and the best taste ever!!!! I find that there's no need to dip the spoon in sugar since they are perfectly sweet already. I slightly dipped so that they would not end up cruncy. EVERYONE has given these cookies rave reviews. I have given them as gifts as well as baked them by the truckloads for both of my children's classes. This recipe is a no-fail attempt and there is absolutely no need to change anything. I added raisins but purely due to personal choice. Your search for the perfect oatmeal cook ends right here!!! Thank you so much for the recipe. I will be making these over and over and over again!!!!!!
