Chipotle Crusted Pork Tenderloin

I loved this recipe. We used pure chipotle powder and it had a kick, but it was very tasty. We were looking for something simple to prepare when we had a guest from out of town come over. This was perfect. We served it with roasted potatoes, grilled asparagus, and a salad. A great meal to entertain with!!

Mango-licious Tilapia

FANTASTIC!!!! We really were looking for something that was not too heavy, but had a lot of flavor and this was perfect. That salsa was great. I let my fish sit in the dish with the orange juice mixture before putting it into the oven. The fish really soaked up the orange flavor. I served it with roasted sweet potatoes and cauliflower. So healthy...so delicious!!!

Vegetarian Green Chile Stew

This was great!!! I added a little extra garlic and a little extra chili powder (we like it spicy). I also added sliced mushrooms...just because they are my favorite. I thought 5 cups of water might have been too much. So, I put 4 cups of water and 3 cups of vegetable broth. It was soooo good. I will be using this again for sure. You can play around with the vegetables, but it is wonderful and has a great flavor. Really glad I found this recipe!!!

Confetti Barley Pilaf

Yum, yum, yum! We really enjoyed this recipe. Instead of shredded carrots and cabbage, I used 1 cup of broccoli slaw and it was fantastic. We'll be making this again and again!

Garlicky Baked Butternut Squash

OH YUMMY!!! I used extra garlic because I LOVE garlic. I tried the suggestion of baking it at a lower temp (I did 375), but still kept it in for an hour, stirring every 15 minutes. It turned out perfect. I added the parmesan cheese the last 25 minutes or so of baking. This was so good. We will definitely make this one again and again. I also tried this with potatoes instead of squash and it was very tasty.

French Silk Frosting

This was delicious! It was really quick and easy to make. About half-way through beating the butter, chocolate, sugar, and vanilla, I realized that I didn't have any milk. So, I used half-and-half. I'm not sure if this really added anything special to the recipe, but it definitely didn't hurt. YUM.

Mouth-Watering Stuffed Mushrooms

Made these for a party we were having. We had a gluten free guest who was really happy to be able to have stuffed mushrooms again. They tasted great! I'll make them again for more parties...easy and tasty!

Portobello Mushroom Caps and Veggies

We really wanted a light meal after all the "holiday eating" and these were perfect. They still filled us up, but did not feel so heavy. I followed what others said and added some white wine and balsamic vinegar (not too much) right before adding the mushrooms. I also added a bit of cayenne pepper to spice it up a bit. So good! We'll probably do these in the summer on the grill, too. I served it with sauteed spinach and a side of confetti barley pilaf (from this site). Perfect!

Hot Spinach Red Pepper Dip

I absolutely LOVE this recipe. I make it for every gathering. However, I use one roasted red pepper, chopped instead of cooking them myselves. Sometimes, I use asiago cheese or feta instead of the Parmesan. I also like spicy food; so, I sometimes add a touch more crushed red pepper or a dash of hot sauce. Sooo delicious!

Slow Cooker Latin Chicken

I loved this recipe! I accidently opened a can of refried black beans instead of black beans. Oops. I decided to use those and it turned out great. I added a little extra liquid, but the beans made almost a thick sauce. I will make this again.

World's Best Lasagna

Oh My Gosh! This was awesome. It was the first thing I made for my boyfriend (besides cookies) and he loved it. I will definitely make this again and will use the sauce for my spaghetti, too. It was so great. I let it simmer a little longer than 2.5 hours, though. Yum

Football Cheese Ball

This was a fun addition to our tailgate the other day. Next time, though, I will not use so much taco seasoning and will add more cheddar cheese. It was very good, though, and everyone seemed to enjoy it.

Chicken Meatballs and Spaghetti

The meatballs, themselves, deserve 5 stars, but the sauce was bland. I sauteed onions, mushrooms, and garlic to add, but it was missing some spices. I was hoping cooking the meatballs in the sauce would be enough to add some flavor, but it wasn't. Next time, I will up the spice in the sauce, maybe add a touch of brown sugar, wine, Italian seasoning, more garlic, etc. I will make this recipe again, though...the meatballs were great.
