World's Best Lasagna

Oh My Gosh! This was awesome. It was the first thing I made for my boyfriend (besides cookies) and he loved it. I will definitely make this again and will use the sauce for my spaghetti, too. It was so great. I let it simmer a little longer than 2.5 hours, though. Yum

Cod with Italian Crumb Topping

This was pretty bland. It needed more flavor. I would add more seasoning and somehow incorporate tomatoes. My boyfriend thought it was pretty good, but I really didn't care for it.

Chipotle Crusted Pork Tenderloin

I loved this recipe. We used pure chipotle powder and it had a kick, but it was very tasty. We were looking for something simple to prepare when we had a guest from out of town come over. This was perfect. We served it with roasted potatoes, grilled asparagus, and a salad. A great meal to entertain with!!

Garlicky Baked Butternut Squash

OH YUMMY!!! I used extra garlic because I LOVE garlic. I tried the suggestion of baking it at a lower temp (I did 375), but still kept it in for an hour, stirring every 15 minutes. It turned out perfect. I added the parmesan cheese the last 25 minutes or so of baking. This was so good. We will definitely make this one again and again. I also tried this with potatoes instead of squash and it was very tasty.

Football Cheese Ball

This was a fun addition to our tailgate the other day. Next time, though, I will not use so much taco seasoning and will add more cheddar cheese. It was very good, though, and everyone seemed to enjoy it.

Vegetarian Green Chile Stew

This was great!!! I added a little extra garlic and a little extra chili powder (we like it spicy). I also added sliced mushrooms...just because they are my favorite. I thought 5 cups of water might have been too much. So, I put 4 cups of water and 3 cups of vegetable broth. It was soooo good. I will be using this again for sure. You can play around with the vegetables, but it is wonderful and has a great flavor. Really glad I found this recipe!!!

Mango-licious Tilapia

FANTASTIC!!!! We really were looking for something that was not too heavy, but had a lot of flavor and this was perfect. That salsa was great. I let my fish sit in the dish with the orange juice mixture before putting it into the oven. The fish really soaked up the orange flavor. I served it with roasted sweet potatoes and cauliflower. So healthy...so delicious!!!

Slow Cooker Latin Chicken

I loved this recipe! I accidently opened a can of refried black beans instead of black beans. Oops. I decided to use those and it turned out great. I added a little extra liquid, but the beans made almost a thick sauce. I will make this again.

French Silk Frosting

This was delicious! It was really quick and easy to make. About half-way through beating the butter, chocolate, sugar, and vanilla, I realized that I didn't have any milk. So, I used half-and-half. I'm not sure if this really added anything special to the recipe, but it definitely didn't hurt. YUM.
