Spinach and Feta Turkey Burgers

Made these for our Memorial Day cookout as per recipe instructions, but sautéed minced onion with the garlic and then added the spinach to incorporate, along with salt, pepper, lemon juice, and worcestershire as other reviewers have suggested. Made 8 burgers out of the 2# of ground turkey and was perfect size, served with tzatziki on brioche buns. Everyone including myself ate two of them and we are not seconds kind of people - they are just THAT good!! This is a company wow keeper recipe - we will be making these all summer!

This is an amateur cosmo - it might as well be a Cape Cod with all of that cranberry juice. A real cosmo is barely pink - martini-style. The way this recipe is written it should just be served over ice - maybe add a splash of club soda.

Gourmet Caramel Apples

I tripled the recipe for my son's school and it really did only take one pkg of caramels per 5 apples. I used Kraft caramels b/c I think they taste better than other brands. I dropped the apples in boiling water for 3 seconds each to remove the wax coating, however in the future I do not think I will do this since it turned the peel a slightly off, darkish color. Thankfully, it did not effect the inside of the apple at all. After chilling the apples, I dipped them in the caramel, then chilled them again for 1 hour. I then melted milk chocolate chips in the microwave according to pkg directions with a little shortening for the chocolate dip, then chilled once more for another hour. I also melted white chocolate chips the same way as the milk chocolate, added some Wilton candy coloring gel, and drizzled over the apples, adding some festive sprinkles. Overall the recipe is a little time consuming with the steps. However, these looked first class and tasted divine! Very rich though - great for sharing. I will be making these again!

Mom's Buttercream Frosting

I was intrigued by this icing since it dated back to the 40s - I just love retro recipes! I also used only butter in the recipe and had wonderful results. I only cooled the flour mixture for about 30 mintues and it worked perfectly. I also added a few drops of red food coloring to make a pink icing since I was using this over a rich strawberry cake. Beautiful results (see picture)!!
