About this Cook
I teach public school and have 2 young boys! I own a business on the side and I'm constantly on the go! Cooking is a release and a pleasure when I have time to focus on it! (Other times is the trusty crockpot for dinner!)
My favorite things to cook
I make a mean chicken enchilada! My boys and hubby think I can cook the best french fries around. I love to make crockpot meals of any kind and I can turn just about any leftovers into a quesadilla master peice with my George Forman grill.
My favorite family cooking traditions
Growing up, we ate out all the time, but my mom made the best spaghetti as well as Shrimp Victoria. Oh Wow. I got those two down pat. All the other recipies I gained growing up were watching my grandmothers eye-ball it and throw a little of this or that into the pot. It was great training. They loved to share secrets with me and I always asked them about how it worked.
My cooking triumphs
I can't think of one particular triumph, but I'm sure there are some...mostly, when I experiment new ideas and my boys eat it, I know it worked because they are tough critics.
My cooking tragedies
I can think of one huge tragedy from way back in high school days...when I was taking a baking class at a local kitchen store, I built up enough confidence to make my grandmother a birthday cake and fix it up huge, with icing roses and all. I somehow managed not to cook the cakes long enough but it looked done when I pulled it out. By the time I got to ice it, I could see it was falling, then when they ate it, there was nothing but raw dough in the center of the whole cake. It sunk completely. how sad.
