Moroccan Tagine

Yum! Butternut squash is in season and on sale, and this was a delicious way to serv it. Only 4 stars because as written, I think this needs more spices, but I like a lot of flavor. I left out the chicken and added about a teaspoon each of cumin, cinnamon, and garam masala spice mix. I garnished with cilantro and served over cous cous, and even my husband liked it!

Country Fried Chicken

I am giving this recipe 5 stars because I have never attempted fried chicken before and, in spite of my mediocre cooking skills, I succeeded on the first try! I breaded 5 drumsticks (not enough flour mixture to do any more than this), fried them for about 10 minutes until the outside was browned nicely, then popped into the oven for 15 minutes. I am always either undercooking or overcooking chicken, but I achieved 'just right' with this dish.

Peanut Butter Vegetable Chicken Soup

My new favorite recipe! I have begun referring to this as "Everything" soup, because I use it to clean out the fridge and cabinets. The peanut butter ties everything together and makes it creamy and delicious. My latest version, I used tofu instead of chicken, rice instead of potatoes, carrots, celery, onion, garlic, can of green beans, can of diced tomatoes, can of water chestnuts, can of bamboo shoots, and collard greens. The rice soaked up a lot of the water but I just popped it into the fridge/freezer that way and I add extra water before I reheat it. Lunch for two weeks!

25-Minute Tunisian Vegetable Couscous

I've never made couscous before but this turned out great! An interesting, healthy veggie-filled dish. My guests loved it and rather than putting the orange/parmesean garnish on it, we added feta cheese which added a wonderful flavor. Also, I couldn't find vegetable broth so I just used water, and I didn't have any cardemom but it was still really good.
