Slow Cooker Chicken and Dumplings

So easy. Really tasty. Followed other's advice and used chicken broth instead of water. Added some other seasoning as well. Definitely will make again.

Turkey and Quinoa Meatloaf

This was definitely easy and seemed pretty healthy, but it doesn't go down as my favorite meatloaf recipe. I love Quinoa, but it does make this a little crumbly, as Quinoa doesn't absorb like crackers or breadcrumbs do. Definitely worth a try if you need something easy and affordable.

Simple Carnitas

Good basic pulled pork recipe. Perfect for taking cooked and adding to it for bbq or mexican style. A little bland, even though it seemed like I put in a ton of salt. If I made it again, I would probably add some spice.

Mom's Yeast Rolls

I will admit this was my first time trying to make rolls from scratch. However, I had to add a TON of flour (after rising twice) to get a consistency that wasn't soupy and would hold long enough to get into the pan. Other reviewers seemed to have a similar problem, so maybe it's the recipe. They basically came out really dense and a little dry. But pretty good with butter and jam!

Lemon Cream Cupcakes

These cupcakes turned out great. I took them out right at 25 minutes and they were done perfectly. I've also made these without the lemon in the batter (so just white cream cake) and substituted almond extract for lemon in the frosting - they were GREAT!

Lemongrass and Citrus Poached Salmon

Maybe I did something wrong, but my husband and I both thought this tasted funny. I think it was the lemongrass. If I made it again, I think I would just leave that part out and make it plain citrus poached salmon.

Chicken Piccata II

Impressive and great flavor. I made a few changes based on other reviews. I dusted the chicken with flour, then the egg mixture, then the seasoned flour and let it sit in the fridge for about a half hour. That seemed to help the seasoned flour stick better. I also browned and cooked the chicken to nearly done before putting the liquid in for the sauce for just the last few minutes. My first batch turned out great. I didn't do this with the second batch - put the liquid in right away like the recipe calls for and the breading started coming off/getting soggy. So, make the sauce very last for just a few minutes or take the chicken out and do it separately like some other's suggest.

Banana Sour Cream Bread

Very good! Moist, easy to make. The cinnamon sugar pan dusting makes a really nice sweet crust. Have to cut big slices because it is a little crumbly & fell apart when I sliced it thin, but the taste is worth it!

Pumpkin Cheesecake Bars

Very easy to make and everyone seemed to like it. Perfect alternative to pumpkin pie. Next time, I might consider adding a little sugar to the liquid part of the recipe to make it a little sweeter, but that is just me. It was good as-is.

Sausage and Egg Casserole

I made this for a group of people and it was FANTASTIC! Everyone raved about it. Easy, just follow the directions and put it in the oven. Not a calorie saver - but the taste made it worth it.

Cauliflower Au Gratin

Really good!! Easy and lower in carb and calories than potato's. Plus you can substitute butter etc...Quick hint: It's easier/better to boil the cauliflower until tender, then put it in a baking dish and add butter, cheese, salt/pepper and breadcrumbs and bake for about 15-20 minutes at 350. Add a little cream, sour cream or milk if the cheese gets too stringy.

Poached Salmon with Alfredo Sauce

This tasted great and looked impressive. Not extremely hard, but the first time if you have never poacked salmon before may take extra concentration. Salmon took a little longer than recommended to cook.
