Vegan Pancakes

I had no eggs or milk, but really wanted pancakes. This recipe was perfect. Granted, the texture is going to be slightly off because there are no eggs but other than that is was exactly what I was looking for. I added a teaspoon of vanilla just because I like my pancakes a little sweet, but other than that, great recipe.

Deep Fried Oreos®

There is no reason to have oil in the batter and it needs be a lot thicker than the recipie calls for, but other than that, so amazingly simple and good. We also just fried the batter and that was good. The only thing I would add to the batter (besides making it thicker) is vanilla extract to make it sweeter.

Chocolate Trifle

This recipe was very good. I drizzled the brownies in kahluah and added crushed heath bars to the layers, which definitly enhanced the trifle. It was quite heavy and I think I may use chocolate cake insead of brownie next time, but overall, very good

Baked Fried Eggplant

This was not bad. I mean, granted, it didn't crisp up as much as if it were fried in oil, but at least it wasn't nearly as fattening. The one thing that annoyed me was that the batter was so thick. When I put the eggplant into the breadcrumbs, it would just come off in globs of batter and I would have press the globs on the eggplant. Plus, it was very messy, with the batter being so thick. However, overall, this was a pretty good alternative to fried eggplant.

Banana Oatmeal Cookie

Excellent cookies. Yes, they were a dense cake like consistancy, but they were very good. I used two bananas for making the cookies, but I think they may have needed one more (very subtle banana flavor). Thanks for the recipe.

Beer Bread I

Good, quick and easy. I didn't have any self-rising flour, so did what other reviewers said and had 4tsp of baking powder to the flour and a tsp of salt. It would be great with corned beef and cabbage. I also used guiness and that gave it a good flavor.

Creamy Chocolate Pie

I think the picture was a bit decieving, but overall, it was an excellent pie. I thought it would be more of a pudding pie, but when I made it I realized it was a mousse pie. Still, using a prebaked oreo crust, it was definitly an excellent chocolate mousse pie. Good job.

Old Fashioned Coconut Cream Pie

Well, according to my mother, the texture is slightly different from what you get at the store, but it was actually a lot better this way. Very rich and flavorful, especially after taking the advice of other reviewers and doing the 1.5 cup coconut milk and 1.5 cup half&half as well as using 1/3 cup of cornstarch. If possible, definitly use cornstarch, it turns out much better. Great recipe, thanks!

It was very good, but unless you really cut down on the butter, it's going to turn out bad. I used half a stick and that still seemed too much, so I drained most of it so that is only coated the bottom. Other than that, it turned out very nice.

This tasted very good. The problem was it would become a dough that could be shaped. All we had was a sticky mass, which we pulled globs from and cooked that way. The taste was great though. We used over two cups of flour, but still no dough formed. Oh well.
