Guinness® Irish Stew

This was delicious. Very similar to what we had while visiting Ireland. I cut my potatoes and carrots in larger chunks and added them after 1 1/2 hrs of simmering beef because they take longer to cook than smaller pieces. I think the directions mean cover "skillet" instead of "dutch oven" in step five and then add everything to beef in dutch oven in step six. At least that's the way I made it and it turned out great. I also added extra sprig of fresh thyme and a sprig of rosemary. I think you could substitute tsp of thyme and rosemary if fresh not on hand. Add salt and pepper to taste. I also think this would be a good slow cooker recipe. Gave this to friends for a thank you gift and they raved about it.

Seasoned Turkey Burgers

Very Tasty and easy. 20mins seems too long for grilling these burgers though. 6-7 mins per side on medium/low heat was plenty. I used 2 lbs meat and 1pkg lipton beefy onin soup mix.

Easy Raspberry Lemonade

I used one 12oz can apple raspberry(couldn't find raspberry lemonade)juice and one 12oz can lemonade,6C water, 1 small lime or half of a large lime squeezed and 24 oz or so of sierra mist. For individual cocktails I made the base without the soda, fill 10z glass with ice, one shot of citrus vodka, pour base over to fill cup 2/3rds full and top off with soda(garnish with rasperries and mint for extra touch) They were a huge hit! Great during hot days by pool. For larger party add 2C citrus vodka and soda to pitcher for easier serving.

Baked Beef Stew

I used the quick cook tapioca and it worked fine - no lumps noted. I used a jar of my canned tomato juice in place of the canned tomatoes w/juice;and left over beef broth for the water. I also added fresh garlic to the beef when browning. It turned out very good, my whole family ate it including my two picky eaters. The only problem was it was a little too salty for my taste. Next time I will cut back on the salt.

Vietnamese Fresh Spring Rolls

These were fantastic! I bought 1lb of the 40-50 count cooked shrimp(on sale) and just put 2 or 3 in each roll instead of cutting up. I also added thin, stick-sliced cucumbers and shredded carrots. I used fresh basil and cilantro from my garden and no mint. Served them with the garlic fish sauce recipe and also the hoison/peanut butter sauce listed in one of the reviews. My pool party guests raved about them. They are a tasty light and healthy appetizer. They do take a little time to make but well worth the effort. I made mine the morning of the party and covered them with wax paper in the refrigerator until ready to serve.

The Perfect Mai Tai

I was not as thrilled with this as I thought I would be from all the reviews. It had too strong of a liquor taste. I elimintated the 151 rum and substituted with light and dark rum to equal 1 cup of the 151. Maybe I should have just left out 1 cup of alcohol all together. I froze what was left over for slushes.

Zesty Marinated Asparagus

This was a nice addition to a fried chicken, mashed potato, and gravy meal. I used a 2.5 lb bunch of asparagus I bought from Sam's and I did not add salt or parsley. I marinated it overnight and took it to the family get together of 17 people. I did add the lemon zest and pepper before serving. Everyone raved about it and there were no leftovers! Even my sister-in-law who doesn't like asparagus said she liked this. It is a great, easy, make ahead side dish. Loved it!

Coconut Tilapia with Apricot Dipping Sauce

This was very tasty and fairly easy to make. It got kind of messy when coating the fish - batter was sticking to my fingers. Maybe someone has a tip on this technique. Both my husband and children enjoyed this one. I used vegetable oil because it's what I had on hand.
