Slow Cooker Mussaman Curry

Reviewed: Jan. 16, 2012
loved this recipe and so did my husband! the few steps to prep before going into the slow cooker wasn't as "time consuming" as I initially had thought. I accidentally forgot the garlic, but we didn't notice at all.. we used udon noodles to accompany the curry, it was so good and will make this again and again!

Clams Creole

Reviewed: Jul. 23, 2012
this ROCKED our socks off! I specifically picked this recipe to showcase the local manila clams we had access to by our campsite in Dosewallips Washington. We added about 50 more clams than the recipe called for, but it didn't matter, we just upped all the other ingredients.. served the clams creole over linguine. We're making this one again! So great!

Pork-Potato Meatballs

Reviewed: Jul. 2, 2012
These were great and flavorful. My husband had a bit of a time cooking them in the pan without breaking them because of the potato, but he didn't care. He said they tasted great either whole or broken. hahaha!

Three Can Shrimp Chowder

Reviewed: Jul. 23, 2012
Excellent camping recipe! We added a baking potato since we had an extra one and this was so "rib-stickin' good" and we'll be adding this to our camp rotation and for home too! I'll defintely add another can of med shrimp or fresh (depending on where we camp next).. we may even add fresh clams which we had access to in Dosewallips WA (great manila, littlenecks, horse clams and mussels)

Grilled Corn with Cilantro Lime Butter

Reviewed: Jun. 16, 2012
Family LOVED the cilantro lime butter for this recipe! Had plenty of butter left over, so I wrapped it in parchment paper, rolled into a "log" and saran wrapped it to freeze. Going to try this butter on steaks and other foods!

Slow Cooker Mediterranean Roast Turkey Breast

Reviewed: Sep. 27, 2012
We really loved this as an alternative to the usual "roast turkey" in the oven. I couldn't find Greek seasoning at the store so I used a Mediterranean rub I make from scratch instead with a bit of lemon zest in it. Turkey turned out moist, very flavorful and easy to make. Can't beat that for dinner! :) Will make this again, for sure.

Amazing Southwest Cilantro Lime Mango Grilled Chicken Sandwiches

Reviewed: May 5, 2012
Husband & I LOVED this recipe.. only sub'd avocados for the mangoes (I'm the only fan of mangoes in the house), but I served it on the side and I used Colby Jack instead of Monterey Jack (couldn't find it in the cheese aisle .. could store have been sold out?!... Next time we make this we're going to use the soft bread used in gyros to be able to contain all that nummy goodness. The french bread just couldn't keep it all in and we had to wrestle to keep the sandwich together in our hands.

Sweet Potato Rolls II

Reviewed: Jan. 16, 2012
these sweet potato rolls turned out really well. used the bread machine to mix and knead the dough initially then proofed outside of the machine. one thing I'll remember to do next time is baste the rolls with honey after the butter before baking.

Premium Pecan Pie

Reviewed: Nov. 5, 2012
My first pecan pie ever, so, the whole jiggle test just didn't seem logical and invariably I think I overcooked it. My dad loved it more for the extra crispy crust & toasted nuts and so did my brother. He did say it's missing more molassas, so maybe I'll sub in some of it next time and omit the maple syrup. But this is definately being made on Thanksgiving!

Coffee Roast

Reviewed: Feb. 17, 2013
We loved this recipe for all its simplicity, it was flavorful and rocked the next day as sandwiches! I used a really nice premium dark roast coffee, seasoned the chuck roast with salt/pepper prior to searing. I'm going to try this next time in the slow cooker as I'm not usually comfortable leaving the stove on for that long of time (toddler in the house!) and will try this in a dutch oven as well. Keeper!

Hobo Pie

Reviewed: Jul. 23, 2012
Great base recipe for hobo pies. We didn't have the "hobo pie toaster" referred to in the original recipe, we used a wonder bread "crustables" press to make the pie pockets. We used blueberry pie filling (our oldest son's request) and wrapped them in foil to cook on the coals. Worked out perfectly and SO GOOD. Next time I'm going to make a sugar butter to spread on the bread, to make a nice sweet glazed crust. Great camping staple instead of having the usual s'mores.
