Vegetarian Kimchi

Born & raised in Seoul, and having tried many varieties of kimchi in my 39 years, I found this recipe very hard to call "Authentic Korean" as 1. Cayenne pepper isn't native to Korea so its not used in their cooking. The flavor profile alone of cayenne compared to Korean red peppers is very different AND the fiery red color in dishes isn't prominent when cayenne is used. Its recommended to use coarse salt, not fine grain table salt to cure the cabbage for better flavor. Also, understanding this is a "Vegan" dish, its hard to give the full robust and interesting flavors of real kimchi without using some kind of fish/shellfish oil, shrimp paste or oysters to assist in the fermentation process. Kimchi is pickled vegetables, using rice vinegar, which this recipe lacks too. The persimmon is a great twist as pear or apple is traditionally used in place of white sugar for the hint of sweet. The Korean red pepper flakes/powder can be easily found at any Asian market, along with the rock salt and rice vinegar. In many places, these items are readily available at your "regular" grocery store in the ethnic foods section. I tried to make this kimchi recipe, but the flavors I was expecting from a kimchi were not present, it lacked the pungent sweet/sour/pickled taste in real kimchi.

Coconut-Pineapple Paletas (Mexican Ice Pop)

My husband liked these, but I was hoping for more of a "pina colada" flavor. I'll try this recipe again, maybe with more pineapple juice or something, maybe less half/half.

Slow Cooker Carrot Cake Steel Cut Oats

Followed the recipe with the exception of adding 1/2 cup raisins and 1/2 cup zante currants instead of 1cup raisins. I initially thought the amount of water (10cupes?) seemed a bit much, esp if you include the applesauce, but since I'd never cooked with steel cut oats, I figured it'll "drink" all the water up and be more like an oatmeal when done, I was wrong. After letting it cook for 6 hours (still looked like brown water in a crockpot) I cooked it for another 2 on low.. still watery and I tasted it this morning (let it cook over night) it was a soupy-watery mess with probably about 3 cups of liquid still left over. I had to dredge out the "oatmeal" from the bottom of the crockpot. All that water didn't get absorbed, or cook down.. its watery oatmeal. Smells great, but its not appealing at all. Was kinda hoping this would be the chance I'd get over my distaste for oatmeal with something yummy. I'll keep searching.

Grilled Corn with Cilantro Lime Butter

Family LOVED the cilantro lime butter for this recipe! Had plenty of butter left over, so I wrapped it in parchment paper, rolled into a "log" and saran wrapped it to freeze. Going to try this butter on steaks and other foods!

Rita's Self-Rising Cornbread Mix

well, the obvious problem with this recipe, is, once you make the "mix".. what about the ingredients/measurements to make the actual cornbread? How much milk? How many eggs and how much "mix" to make a loaf or muffins? There's no sugar, so this would be straight cornbread.. I'm going to have to tinker with this mix to get the exact milk/egg/sugar to mix ratio.

the "drink mix" ingredient needs to be worded way differently. Instead of drink mix, it should say "1/2 cup premade sugar-free lemon flavored drink mix" or something to clearly say you should be using 1/2 cup of the drink mix already made. I had to make this recipe twice, because the first time, I used 1/2c drink mix in the powder form.. which ironically tasted better than the 2nd attempt when I used the made drink mix (which made it taste bland.)

Baked Potato Pizza

Great pizza though we followed the boxed pizza mix instructions instead of the recipe. We loved it, but the kids didn't find it appetizing. It does taste so much like a fully loaded baked potato!

Grilled Lamb Burgers

Great seasonings though I did tweak the meat and omitted the egg/breadcrumbs. I did half beef and half lamb so I wouldn't have to use the egg/breadcrumbs and make it juicier. Other than that, this is a keeper!

Awesome Italian Macaroni and Cheese

In reviewing the ingredients, there's nothing in the recipe to make it "Italian", so I'm kinda scratching my head as to why it was added as part of the description. Made the recipe as written and baked up fine. I was a bit concerned with the finished texture of the Mac/Cheese, it wasn't creamy cheese, but more of a firm flan/custard like sauce after baking. There's not much "cheese" IN the recipe so much as its a topping. My husband enjoyed it and 1 of 2 boys did as well. I just couldn't get around the texture and lack of cheese in the sauce and lack of seasoning. I included Italian seasoning into this recipe, so at least I'd be able to say its Italian Mac & Cheese.

Three Can Shrimp Chowder

Excellent camping recipe! We added a baking potato since we had an extra one and this was so "rib-stickin' good" and we'll be adding this to our camp rotation and for home too! I'll defintely add another can of med shrimp or fresh (depending on where we camp next).. we may even add fresh clams which we had access to in Dosewallips WA (great manila, littlenecks, horse clams and mussels)

Chicken Melt

Decent chicken melt recipe, though "sprinkling red wine" on chicken while its over open flame doesn't sound ok to me.. I did a quick toss with the herbs, wine and a little bit of olive oil with the chicken in a bowl before grilling. It did turn the chicken a grey purple, but that's what happens when you use red wine on white meat. Next time I'll use white wine instead to avoid the weird staining. I'll also use some mayo on the english muffins before hand to kinda give them some moisture and flavor. Decent, I'll make it again.

Individual Pumpkin Pies

We loved these, even my uber picky mother, and its going into the fall desserts rotation! I just wish the nilla wafers would've stayed "crispy" like a crust, but I'm working on that right now. :D AND I'll use the foil baking cups next time instead of the standard paper ones.

Made this using homemade blueberry pie filling instead of the canned kind. Turned out amazingly well and it was SO delicious with a nice scoop of double vanilla ice cream on top while still warm.. keeper!

Authentic Arawak Bar-B-Q Sauce

Made this sauce to use as a marinade for chicken and it was great. I didn't use the scotch bonnet (just way too hot) but used chipotle instead. It was wonderful grilled. Next time we make this with poblanoes or similar. Its a keeper!

Amazing Southwest Cilantro Lime Mango Grilled Chicken Sandwiches

Husband & I LOVED this recipe.. only sub'd avocados for the mangoes (I'm the only fan of mangoes in the house), but I served it on the side and I used Colby Jack instead of Monterey Jack (couldn't find it in the cheese aisle .. could store have been sold out?!... Next time we make this we're going to use the soft bread used in gyros to be able to contain all that nummy goodness. The french bread just couldn't keep it all in and we had to wrestle to keep the sandwich together in our hands.

White Peach Sorbet

Really liked the simplicity of this recipe. Will definitely make it again with 1 modification of using a simple syrup instead of sugar to sweeten sorbet to avoid any gritty texture. We used regular peaches as white were not available when I made this. Added a few leaves of mint to add additional flavor (next time use a mint simple syrup?). It was smooth, creamy and flavorful.

Baked Italian Chicken Breast with Brie

We loved this recipe and will make it again but with some additions like a few dashes of True Lemon crystals and Italian parsley for the rub portion to brighten it up with a tart flavor, and rough chopped scallions added to the other vegetables. Very easy to make and great with a simply dressed salad.
