Raspberry Lemon Muffins

These were really good! I added a little bit of whole wheat pastry flour and some raspberry jam. I also used fruit on the bottom strawberry yogurt. They were perfect for breakfast and I love that they're low fat!

Classic Bran Muffins

This muffin was too dry for me. Of course, I'm doing a review on a bunch of changes I made, so it's probably my fault. I subbed banana for the oil, added 1/3 cup coconut, added 1/2 tsp vanilla extract and 1 tsp coconut extract, used egg whites instead of egg, and sprinkled cocnut on top. I will try to make these again, but maybe put some more banana in or find a way to soften the bran more.

Raspberry Fudge Brownies

These were absolutely spectacular. I messed up the sweetened condensed egg mixture, and it was still delicious! The only thing was the cream cheese made it very difficult to cut, but totally worth it. yum yum yum!

Cranberry Nut Bread

I subbed applesauce and yogurt for the butter and orange juice, and added in some vanilla extract and cinnamon. I used 1/2 whole wheat flour, and half white flour, and sprinkled some flax seed on top. Lastly, I used a cup of frozen cranberries and 1/2 a cup of dried cranberries. I also added 1/2 tsp of baking powder. My bread was pretty heavy, but that's understandable because of the flour. Maybe I'll put in more baking powder next time?

Nutty Pumpkin Waffles

Yum! I added vanilla, and used pecans, chocolate chips, and/or walnuts on top. It was very good! I didn't try the syrup because of the iffy reviews.

I thought these were really delicious! I was suprised! The only reason that they don't get five stars is because they tasted just a tiny bit eggy still. I really want to try this with cranberries and pecans or raisins and walnuts. yum. Also, I added in spices and vanilla to give extra flavor. Lastly, I wasn't able to whip the egg whites to stiff peaks, but I guess it didn't matter? The instructions about the egg whites were a bit confusing.

I did make a bunch of changes to this recipe (adding lemon, subbing yogurt for oil, drizzling with a lemon sauce) so my review isn't of the initial recipe, but my outcome was AMAZING.

Pineapple Cake II

This turned out really good for me! I added a splash of vanilla and some cinnamon. I also added a little bit of chopped peaches to the pineapple. The cake wasn't too dense to me at all! Instead of the butter topping i did a blueberry sauce topping. yum!

These were delicious, and extremely easy, especially if you marinate the chicken before hand. I would use more peppers if you like veggies, but other than that, yum! (Oh, and throwing in some cheese is tasty too!)

I substituted an equal amount of strawberry puree (strawberries and just enough water to blend them) for the oil. They still came out great! The loaves look beautiful. =]

5, 10, 20 stars! This recipe is delicious. I've made it a bunch. The only change I make is subbing applesauce, banana, or pumpkin for the oil and apple butter. Yum!

Brownie Mix in a Jar II

I made this fat-free by using yogurt instead of the oil and fat-free egg substitute. I also added a teaspoon of vanilla, a few chocolate chips, and left out the pecans. Oh, and cut the sugar back to 1 3/4 cups. It obviously didn't taste like a typical fudgy brownie, but it definitely satisfies a chocolate craving in a healthy way! I liked it with whipped cream and toasted almonds on top, or some raspberry jam spread over. Yum. =]
