Sunday Brunch Casserole - Pork Free

For a great bacon free version: I used Ore-Ida O'Brien brand potatoes. (this brand tastes the best to me) Since they have peppers and onions added, I did not add chopped peppers and onions. I used more of the potatoes (4 1/4 C) to make up the volume. I added a more cheese (used 2 C). All other ingredients remained the same. My family loved it!

Pecan Clouds

very yummy and easy. don't try to make these using a hand mixer. I started that way and realized I would be at it for hours. you need a full powered stand mixer with a whisk attachment to get the egg white mixture to a hard peak.

Pumpkin Cookies V

These are a hit with the family. I did add 1 bag semi sweet chocolate chips and 1 c chopped walnuts. Also, I baked them 13 minutes. I also doubled the cinnamon.

Honey Crystal Almonds

Loved these almonds. I decreased the temperature to 325 and roasted the almonds a few minutes longer. I also used twice as much almonds (4 cups) to the same amount of honey because I noticed there was a lot of honey left over. It worked great. I also added cinnamon and 1/4 teas clove. kicked it up a notch!

Coconut Bon Bons

These are very good. The second time I made them, I cut the sugar, condensed milk and butter in half, added about 1/4 teas. of vanilla, and increased the coconut (sweetened) by a half of cup. I also used special dark chocolate chips. These changes made them even better and task very much like Mounds candy bars.

Very easy and GREAT tasting. I put in about 1 1/2 C choc chips and about 1/2 to 3/4 of a C of peanut butter chips. mmmm

Flourless Chocolate Cake I

This cake was a hit with the family and easy to prepare. I followed the recipe except I did not have enough bittersweet chocolate so I used 8 ounces of semisweet and 10 ounces of bitter sweet. I also make a raspberry sauce to drizzle over the cake.
