Frosted Pumpkin Muffins

Reviewed: Oct. 15, 2011
Wonderful recipe! Moist and great pumpkin taste. I love the ease of making and the taste is not overly sweet but pretty much perfect. This is definitely a "keeper." I made frosting from a review by "Adagio" on" Cream Cheese Frosting 1". He used 4 oz.(1/2 pkg) cream cheese, 4 oz. (1 stick of unsalted butter), 2 cups of sifted confectioners sugar and 1 Tb of milk (he used cream but I did not have.) and 1 teaspoon of vanilla. Probably the best cream cheese frosting I've ever made...

Refreshing Cucumber Salad

Reviewed: Apr. 25, 2011
Delicious Salad! I didn't have tomatoes but will definitely add (especially when I can use my home-grown.) next time. I did add a bit of dried dill and used 1/2 mayo and 1/2 sour cream as another viewer did. Had some small cucumbers I found at the grocery and don't know if that made a difference or not but this recipe is fantastic. Thanks, ShawnaRae!

Filipino Lumpia

Reviewed: Apr. 22, 2011
Delicious! Used some left-over pork loin roast which I ground up in my food processor. Heated up with the cooked carrots, green onion and cabbage. I added a bit more soy sauce. I used wonton wrappers and also used sweet and sour sauce for dipping. I must not have used a pound of pork as this made 10 won ton wrappers, which I filled with heaping 3 Tbsl. of the filling. Thanks for a wonderful recipe! Will be making again and again....

Yummy Meatloaf

Reviewed: Nov. 4, 2010
I halved the recipe for the two of us. As another reviewer suggested, I used some onion soup mix in place of the chopped onion and along with the steak sauce, added some worcestershire sauce. A wonderful change from another viewer was to use 1 part grape jelly to 1 part catsup, add a few dashes of tabasco and pour over the top of the meatloaf. Delicious! This recipe is a keeper!

Delicious cookies! I did add some chocolate chips and craisins along with the pecans. Did not add the ground cloves or frost the cookies. Next time I'm making a double batch. YUM!

Cream Cheese Pickles

I add some shredded, sharp cheddar cheese and finely chopped green onion (use the green part, too) to the cream cheese (mix well) before spreading on ham slices. Grandkids (all ages) absolutely love this recipe....

Baked Whole Cauliflower

Reviewed: Apr. 27, 2010
This recipe for baked cauliflower is DELICIOUS! I precooked the cauliflower in my Microwave Oven. I added 1/2 cup of water to a glass dish, added cauliflower, cut in half and covered with a lid....cooking 13 minutes. I used Panko bread crumbs mixed with some Lawry's seasoning salt in place of the seasoned bread crumbs. Combined with the rest of "step 2" the topping was absolutely perfect. Like another viewer, I chopped the cooked cauliflower a bit before adding the topping. Can't wait to serve to company!

Luscious Lemon Cheesecake

Reviewed: Apr. 12, 2010
Made my crust with crushed, creme filled vanilla cookies with the finely chopped nuts. Baked crust for 10 minutes before filling. Read somewhere to set the cheesecake on a cookie sheet to bake and also used a meatloaf pan of water in oven. Cheesecake was perfect - not a crack in sight. I, like others, added 2 Tablespoons of fresh lemon juice and used the lemon zest. Thanks for a fantastic recipe!

Jammin' Beef Stew

Wow. this recipe is fantastic. I did cut back a little bit on the jam...but it is the jam that makes this recipe so good. I used a little more than a 1/4 cup.

Quick Artichoke Pasta Salad

Reviewed: Mar. 19, 2010
I did not have marinated Artichokes on hand so opened a can of regular, chopped amount to use and marinated in some Italian dressing for a while. Adding sliced pepperoni (as another reviewer suggested) was especially enjoyed by the Grandchildren. Yummy Salad!

Loved how simple this recipe is to make and yet the taste is perfect. I used Dill relish and, like another reviewer, used a dash of Worcestershire Sauce.

Mimi's Zucchini Pie

Reviewed: Jan. 29, 2010
As I popped the recipe in the oven, I realized I had forgotten to add the 1/4 cup of Vegetable oil with the eggs. I took out of the oven and added the oil, using a knife to work in as best I could. I kept telling DH that I would probably be making scrambled eggs for supper, but, this recipe is very forgiving as it turned out perfect. I used 1 cup each of zucchini and summer squash and added 1 cup of cubed ham. Threw in a bit of fresh spinach I wanted to use up. DH kept saying "this is delicious" and when he reheated left-overs for lunch today, he said it again. I did bake at 350 degrees for one hour. Probably because of all that oil that needed to cook in. Thanks, Suzanne for a wonderful recipe!

Fabulous! Made a recipe to stuff an 18 pound turkey and a recipe for the Slow Cooker. Omitted the mushrooms and marjoram (personal preference). I can only say that the family LOVED it! Thanks Wanda Galloway for this great recipe! M. Joan

Soundview Crab Salad

Reviewed: Oct. 19, 2004
My mouth is still burning from the "heat" of this recipe..but I could not stop eating it! I used imitation crabmeat and definitely wasn't a pound, so that is probably why it was so spicy. I ended up doubling the sour cream and mayo to tone down the flavor. Next time I will halve the cayenne pepper, and go from there. What a great taste, though. Can't wait to serve to our friends. Thanks, HEP303!
