Italian-Style Quinoa-Stuffed Sole

This is a good basic recipe. My only difficulty was that it was a little bland. I'm on a lot of food restrictions, though, so I wanted to make this recipe work! Solution: GARLIC! I added 2 cloves of garlic to the quinoa as it cooked, and then sliced a 3rd clove and laid that over the sole before popping it in the oven. I also sprinkled a little sesame oil over all before tossing it in. I can't have spicy food right now... but should my stomach again be able to handle it, I would love to try this recipe with a little hot red pepper chopped fine and added into the mix. Someone try it and let me know how it turns out!

Baked Potato Soup

I love this soup - and over a year later, some guests I made it for still talk about it every time I see them (guess I'd better invite them over for dinner again!). The recipe is great as is - but is also a great way to use up mashed potatoes, or even scalloped potatoes (especially if you make a spiced scalloped potato dish - yum!). I would recommend not garnishing yourself - but putting small dishes of "baked potato garnishes" (sour cream, bacon bits, cheese, green onion, chives... anything else you might think of) on the table and letting guests dress their own. Great fun!

Chorizo and Lentil Stew

This is now one of my favourite stew recipes - I always add in some frozen chopped spinach, and often chop up and toss in whatever veg I have on hand that I need to use up - bet you could use kale as well, will try that next time. Works great in the slow cooker!

Sweet and Sour Meatballs (Suan T'ien Niu Jou Po Lo La Tzu)

I've made this recipe before, and definitely recommend doubling the sauce. I also toss in a little lemon or lime juice for extra tartness. Last night, though, in a fit of crazy brilliance, I threw in some fresh cranberries with the pineapple juice, and later added a couple of spare jalepenos! Sure the cranberries turned the leftovers a very unique shade of purple - but the flavour was GREAT! And a nice little zip to boot!

Texas Brownies I

Well, perhaps I don't know the meaning of the word 'brownie' - but it tasted like a brownie to me. I loved these, they have a nice vanilla flavour that compliments the chocolate and cinnemon. I will definitely make them again.

Rosemary Roasted Turkey

Welcome to my new turkey recipe! This is it, I think, for the rest of my life. It's so fresh, and makes GREAT gravy. One added thing I always do....use carrots and leeks instead of a rack for the turkey - then, when you go to make the gravy, make sure you push the carrots and leeks through a sieve to add all that goodness into the pot. It's really the best possible gravy you could ever have!

Meatball Orzo Soup

Followed some of the hints - extra orzo, also used more zucchini, and put quite a bit of cayenne in my meatballs. It was FANTASTIC. Everyone loved it - the spice was a really nice balance to the citrus. mmmmm!

Fennel Soda Bread

Seriously amazing, and seriously easy to make. I love the flavour of fennel - but even if you don't particularly like fennel, it's subtle and adds a nice punch to the bread. Almost everyone I've served this to has asked for the recipe!

Giant Toffee Chocolate Chip Cookies

This was an 'ok' cookie recipe, but I found them a little bland, and soft, but not at ALL chewy....perhaps it's a personal preference thing?

Butternut Bisque

I loved this recipe! I changed the spices - added cinn, ginger, and a significant amount of nugmeg, which gave a great, warm flavour. I also went overboard with the amount of squash. Freezes surprisingly well.
