About this Cook
I live in Kansas City, Mo with my boyfriend. I have to say that I have been a little lazy about cooking the past couple of years--we have a lot of take out! I do love to cook and always look forward to the holidays so I can treat lots of family and friends.
My favorite things to cook
I tend to collect a lot of recipes, but use very few. I love to cook with chicken, salmon and potatoes, among other things.
My favorite family cooking traditions
I remember cooking as a kid with my stepdad. He was a school principal, so summer afternoons were spent planning dinners. We "created" a lot of forgotten recipes, but we had great fun!
My cooking triumphs
I made a fabulous Pumpkin Toffee Cheesecake for Thanksgiving three years ago and it has become a tradition. I also make an awesome Peach Toffee Crisp (toffee is fun to cook with) which is served in individual ramekin dishes.
My cooking tragedies
I've had a few...I'm not a very patient cook. I tend to rush things and when that happens, disaster sometimes strikes.

Burrito Pie
I've made this recipe so many times over the years, but tonight was the first time I made it with chicken. It was great. However, I make it, I only use one can of refried beans and normally add a bit more salsa. Served with lettuce, sour cream and maybe a bit more cheese and it's a great meal. Leftovers go a long way as well and are still great days later.

Black Beans and Pork Chops
I wasn't that impressed with this meal. Yes, it was easy and economical, but the taste didn't wow me. If I were to make this again, I would probably add some corn, and maybe some cheese.

Flank Steak with Mushroom Sauce
This meal was both easy to prepare and delicious! I followed the directions exactly except for the fact that I did not have fresh or dried rosemary. It was a hit in my house served over rice.
