Chinese Cabbage Salad II

Delicious! The store was sold out of broccoli slaw, so I used angel hair shredded cabbage and threw in lots of shredded carrots. Excellent! I also cut out the 1/2 c of oil and just used about 2 t of sesame oil. I followed other's advice and subbed rice vinegar for red wine vinegar and heated Morningstar Farms Veggie Chicken Patties, sliced them and threw them on top of each serving. Fantastic recipe! Zesty Slow Cooker Chicken Barbecue

Delicious! I made this for a group camping trip. It was phenomenal! I made it the afternoon before we left. I shredded the chicken and put it back in the slow cooker for a couple more hours. I had no problem with runny sauce - the shredded chicken really does soak up the sauce. Baby Ray's and Kraft Italian worked well together. Adults loved it, kids loved it. I'm making it again for our next camping trip and I'll be making it frequently! Thanks for the great recipe!

Spicy Fisherman's Pie

Balsamic-Glazed Salmon Fillets

Fantastic! It even got a thumbs up from my son who does not care for fish! I didn't have wine on hand and turns out I didn't have Dijon either. I used water and then used some spicy brown mustard. I had to add more honey to balance the spicy brown. Great and easy recipe! Thanks for sharing!

Jalapeno Popper Wontons

YUM! I used fresh jalapenos, but next time I'll keep more seeds in - it was too mild. I added some bacon and baked it at 450 for 10 minutes. We didn't use the sauce. Next time I'll try to remember to try it. Thanks for sharing this great recipe! I'm already planning to make it for our annual Xmas party!

Broccoli with Garlic Butter and Cashews

Delicious! I used just over 1 T of butter and it was fine. Next time I might not add any. Husband raved. 10 year old said it was way better than "regular" broccoli. I also used a package of steam-in-the-bag frozen broccoli and just mixed the dressing ingredients in a ramekin (heated for a few seconds to melt the butter) and poured over the broccoli when ready to eat. YUM!

Grain and Nut Whole Wheat Pancakes

Amazing pancakes! They really do taste just like IHOP's Harvest Grain! I used to eat a plate of them every week when I was pregnant (hey, at least it was right after prenatal water aerobics!). So happy I can make them whenever I want now! Thanks for the recipe.

Old Fashioned Onion Rings

Fantastic! We made these as the inaugural use of our deep fryer. It was the PERFECT way to start our deep fry fascination! The kids declared them, "Just like a restaurant!" I predict we'll be making these often (hopefully not too often or we'll have to be rolled out doorways). Thanks for the recipe!

Amy's Sensational Summer Salad

Wow!! This is an amazing salad! I made it mostly as directed - adding only a handful of slivered almonds and cutting the dressing WAAAAY down. I was very scant with the dressing as my son doesn't always like dressing. I left the bottle on the table to add more if people chose. Only one did. I also used vegetarian chicken strips, so did not need Italian dressing. This was such an amazing salad - it made a huge bowl. We ate the entire thing and can't wait to have it again. Thanks for sharing! (I can't wait to go to a potluck or barbecue so I can bring this salad!)

Chicken Asparagus Roll-Ups

Fantastic!! Wow! I used the same ingredients in the sauce (subbing basil for tarragon), but just eyeballed amounts. I added a few more stalks of asparagus since mine were so thin. I baked it at 425 for 25 minutes and it came out great! Thanks for sharing this great recipe, Monica!

Chocolate Truffle Cookies

Delicious! I didn't add the 2 T of baking cocoa as I was making them as a gift for my mom who prefers milk chocolate and I didn't want them TOO too dark chocolate-y. They were still fantastic! My husband wants me to add a little coffee next time. Thanks for sharing the recipe!

Yummy Bok Choy Salad

Delicious!! I followed Chester Copperpot's advice and used 1 T olive oil, 1 T sesame oil, 2 T rice vinegar, 1 T sugar and 1 T soy sauce for the dressing. Plenty! I couldn't find baby bok choy, so used a full bunch. Tasted great! I added dried cranberries. Following others' advice, I also had a ramekin of chow mein noodles on the table for people to add their own. That way no soggy noodles in my husband's leftover lunch tomorrow! Thanks for sharing! This will be a frequent part of our dinners!

Roasted Garlic Cauliflower

Fantastic! I skipped the cheese and it was tasty without it. I followed the advice of many and put the florets in a bowl and drizzled the oil and garlic in and mixed it by hand. I spread it on a cookie sheet and baked at 400. I used purple cauliflower because it was so cool looking at the store! (Unlike most vegetables that lose their unusual color when cooked, the purple got darker when roasted!) Really great! Kids even liked it.

Potato and Bean Enchiladas

Fantastic! I added a little enchilada sauce to the filling. I also added some shredded cheddar cheese. I used green salsa instead of making the tomatillo sauce. This was a great recipe! I really love enchilada sauce, so I think next time I'll try adding green salsa to the filling (it is a great mix with the potatoes and beans)and top with enchilada sauce. Thanks for sharing!

Roasted Carrot Salad

Fantastic!! Even the hesitant child ended up giving it a surprised thumbs up! I roasted the carrots alone, added garlic into dressing, and added nuts with cranberries and feta. It was really great! My husband could hardly stop eating it! Thanks for sharing!

Rhubarb and Strawberry Pie

This is phenomenal! I have never liked rhubarb, but agreed to make the pie for my husband's birthday. It looked pretty, so I had a sliver. OMG - it was so good I had to immediately have another piece! Perfect blend of tart and sweet. I followed the filling recipe exactly. The only change I made to the pie was to make a lattice top and I only sprinkled sugar on it, rather than brushing with the egg yolk. I never thought I'd say this - but I love strawberry-rhubarb pie (but only if I make it and use this recipe)! Thanks for sharing! (My husband is particularly thankful for sharing since now he knows he'll get this pie more than once every seven years!)
