Baked Ziti II

Delish! My whole family enjoyed this - including my seven year old who does not like pasta! I used a Vodka Marinara sauce with it. I used lowfat mozzarella and lowfat cottage cheese - both worked well. I followed the advice of another reviewer and baked it covered for 20 min, uncovered for 10. We'll definitely make this again!

Fettuccine with Sweet Pepper-Cayenne Sauce

This was fantastic!!! I only used 1/4 t of cayenne - because while I love the spice - my husband likes it milder. It still had some kick with 1/4 t. I also took heed of people's comments about less broth and only added 1/2 c. Finally, I sauteed some scallops and served on top of the pasta. Perfect!

Pumpkin Pancakes

Wow!! My whole family LOVED these! I had some spaghetti squash that turned out more of a puree than spaghetti, so I used that instead of pumpkin. Delicious! My youngest was hesitant, took a tiny bite and proceeded to down four hearty pancakes!

Rhubarb and Strawberry Pie

This is phenomenal! I have never liked rhubarb, but agreed to make the pie for my husband's birthday. It looked pretty, so I had a sliver. OMG - it was so good I had to immediately have another piece! Perfect blend of tart and sweet. I followed the filling recipe exactly. The only change I made to the pie was to make a lattice top and I only sprinkled sugar on it, rather than brushing with the egg yolk. I never thought I'd say this - but I love strawberry-rhubarb pie (but only if I make it and use this recipe)! Thanks for sharing! (My husband is particularly thankful for sharing since now he knows he'll get this pie more than once every seven years!)

Lemon Poppy Seed Muffins I

I'm glad to find a poppy seed muffin recipe that isn't filled with oil! I haven't quite gotten it as soft as I'd like it, but it is still cakey without being crumbly or too heavy. They are best right out of the oven! A batch of these does not last long in our house!

Ginger Glazed Mahi Mahi

This was delicious! I give it a 4.5 - it's a 4 without the glaze, but a definite 5 with it! I can't wait to try it on salmon! I just now realize I forgot to add the olive oil in the marinade - didn't miss it though. Thanks for a great recipe!

Great dish! I made this for a side dish last night. I skipped the cilantro (hubby doesn't like) and the cheese. I used a can of diced tomatoes with green chiles. Easy and delicious! I'll be making it again! Thanks for the recipe!

Holiday Red Punch

Fantastic punch! We added some lemon-lime soda to it to give it a little sweetness and some sparkle. We adults also discovered it makes a nice adult beverage when you add a little vodka to your cup. We particularly enjoyed the blueberry vodka with it, but also tried (and liked) citrus vodka with it and plain vodka.

Broccoli with Garlic Butter and Cashews

Delicious! I used just over 1 T of butter and it was fine. Next time I might not add any. Husband raved. 10 year old said it was way better than "regular" broccoli. I also used a package of steam-in-the-bag frozen broccoli and just mixed the dressing ingredients in a ramekin (heated for a few seconds to melt the butter) and poured over the broccoli when ready to eat. YUM!

Brazilian Fish Stew

Great stew! Thumbs up from the whole family! I used cod, but next time will try salmon. I also will cut the peppers into smaller pieces instead of whole strips. Delish and easy! (I used two red peppers instead of four.)

Libby's® Famous Pumpkin Pie

This is the best pumpkin pie recipe around - as long as you do one thing: use fresh pumpkin! I substitute 2 c fresh pureed pumpkin for the can of Libby's. Perfection! It is soooo much better with fresh pumpkin. That said, use this recipe! You will not be disappointed.

Seven Layer Tortilla Pie

Amazing!!! Rave reviews from the whole family! In fact, oldest son begged us not to send all the leftovers in Dad's lunch so he could have more later. I baked four tortillas in the oven as it preheated. I used two cans of refried beans instead of the pinto beans. One would have sufficed. I added green onions to the black bean mix. I used pepper jack cheese instead of cheddar. And I topped it with avocado slices after I took it out of the oven. YUM!

Grain and Nut Whole Wheat Pancakes

Amazing pancakes! They really do taste just like IHOP's Harvest Grain! I used to eat a plate of them every week when I was pregnant (hey, at least it was right after prenatal water aerobics!). So happy I can make them whenever I want now! Thanks for the recipe.

Rigatoni Surprise

Meh. It's not bad, but it's not as good as the reviews led me to hope. Kind of a bland Hamburger Helper type dish. Again, it's not bad, just more of a Midwestern hotdish.

Jalapeno Popper Wontons

YUM! I used fresh jalapenos, but next time I'll keep more seeds in - it was too mild. I added some bacon and baked it at 450 for 10 minutes. We didn't use the sauce. Next time I'll try to remember to try it. Thanks for sharing this great recipe! I'm already planning to make it for our annual Xmas party!

Short Cut Mexican Fideo (Vermicelli)

Zesty Slow Cooker Chicken Barbecue

Delicious! I made this for a group camping trip. It was phenomenal! I made it the afternoon before we left. I shredded the chicken and put it back in the slow cooker for a couple more hours. I had no problem with runny sauce - the shredded chicken really does soak up the sauce. Baby Ray's and Kraft Italian worked well together. Adults loved it, kids loved it. I'm making it again for our next camping trip and I'll be making it frequently! Thanks for the great recipe!
