Amy's Sensational Summer Salad

Wow!! This is an amazing salad! I made it mostly as directed - adding only a handful of slivered almonds and cutting the dressing WAAAAY down. I was very scant with the dressing as my son doesn't always like dressing. I left the bottle on the table to add more if people chose. Only one did. I also used vegetarian chicken strips, so did not need Italian dressing. This was such an amazing salad - it made a huge bowl. We ate the entire thing and can't wait to have it again. Thanks for sharing! (I can't wait to go to a potluck or barbecue so I can bring this salad!)

Tasty Roasted Beets

My husband loves beets. I do not like beets. I do, however, love my husband. I love him more than I dislike beets. So, I tried this recipe. He loved them. I have to say, I did not hate them. While it didn't convert me to a beet lover, it did make me (at least for tonight) a beet eater. :) Thanks for sharing!

Chicken Asparagus Roll-Ups

Fantastic!! Wow! I used the same ingredients in the sauce (subbing basil for tarragon), but just eyeballed amounts. I added a few more stalks of asparagus since mine were so thin. I baked it at 425 for 25 minutes and it came out great! Thanks for sharing this great recipe, Monica!

Fugi Salad

This was great! I made a half recipe. I followed some of the advice and used only 2 t of sugar (instead of what would have been 1/4 c). I also cut down on the oil a little. Fantastic! We all enjoyed it and there was just enough leftover for my husband and I to each have a small salad with our lunches. We'll make this one again! Can't wait to try it next time with sesame oil! Thanks for sharing!

Yummy Bok Choy Salad

Delicious!! I followed Chester Copperpot's advice and used 1 T olive oil, 1 T sesame oil, 2 T rice vinegar, 1 T sugar and 1 T soy sauce for the dressing. Plenty! I couldn't find baby bok choy, so used a full bunch. Tasted great! I added dried cranberries. Following others' advice, I also had a ramekin of chow mein noodles on the table for people to add their own. That way no soggy noodles in my husband's leftover lunch tomorrow! Thanks for sharing! This will be a frequent part of our dinners!

Vegetarian Tortilla Soup

I thought this was okay. I didn't think it had enough oomph to it. I added a can of drained black beans. I did one can of green chiles (because we had a guest over who doesn't like overly spicy food) - but to compensate for my own serving, I added sliced jalapenos. The soup was made much better by the toppings (cheese, sour cream, avocados, jalapenos and cilantro), but I gave it three stars because I like my soup to be enhanced by toppings, but also able to be served on its own. Thanks for sharing!

Potato and Bean Enchiladas

Fantastic! I added a little enchilada sauce to the filling. I also added some shredded cheddar cheese. I used green salsa instead of making the tomatillo sauce. This was a great recipe! I really love enchilada sauce, so I think next time I'll try adding green salsa to the filling (it is a great mix with the potatoes and beans)and top with enchilada sauce. Thanks for sharing!

Lemon Drop Martini

Great! I followed Cowboy Phil's advice to make a Key Lime Pie Martini - substitute Nellie and Joe's Key Lime juice for regular, substitute whipped cream vodka for citrus vodka. I added a half tablespoon sweetened condensed milk. Delicious! Thanks for sharing!

Chili Rellenos Casserole

This was fantastic! Rave reviews from all four of us! I gave it a 4 only because I made changes from the original - following the common suggestions - cook in an 8x8 pan, 3 eggs, 12 oz can of evaporated milk and no regular milk, enchilada sauce instead of tomato sauce. I used a lot less cheese - because I was running short of time and couldn't grate a bunch of it. Delicious recipe with the tweaks. Thanks for sharing!

Veronica's Apple Pancakes

It is probably a 3.5 for me. I added the extra cinnamon as recommended and extra sugar. I added walnuts to boost the flavor. It was a good recipe, but not quite as tasty as Fanny Farmer's apple griddlecakes. Still, it's a good way to use up our bumper crop of apples! Thanks for sharing!

Sweet and Tart Strawberry Salad

Amazing! I cut the berries into chunks, let them sit longer than 10 minutes (closer to 45). I added the balsamic right before serving. I put a small bed of arugula on each plate and topped with the berries. Delish! One son had a huge helping of seconds - despite eyeing it skeptically when he sat down to his plate.

Ultimate Frozen Strawberry Margarita

Fantastic! We made a triple batch for our Cinco de Mayo fiesta! I mixed up all the ingredients (except the ice) the night before, put it in a Ziploc and put it in the freezer. We crushed up a blender full of ice, poured 1/3 of the mixture in, stirred it and then spooned it into our glasses. Repeated twice throughout the night! HUGE hit! Can't wait to experiment with other flavor combos all summer long!

Baked Omelet Roll

Roasted Carrot Salad

Fantastic!! Even the hesitant child ended up giving it a surprised thumbs up! I roasted the carrots alone, added garlic into dressing, and added nuts with cranberries and feta. It was really great! My husband could hardly stop eating it! Thanks for sharing!

Baked Kale Chips

This is fantastic! My oldest son came home from school and initially refused to try them, claiming, "They sound awful!" When I finally got him to try a small crunchy one, he paused, then proclaimed, "These are soooooo good!" He then proceeded to eat 1/3 of the bowl! I would give them a five star rating, but I'm having trouble getting the proper crunch to all of them - which seems to be a common problem based on reading reviews. I'm not sure if it's the recipe or me, so I may go back and revise it to a five after a few more attempts. I used cooking spray instead of drizzling it with olive oil.

Roasted Garlic Cauliflower

Fantastic! I skipped the cheese and it was tasty without it. I followed the advice of many and put the florets in a bowl and drizzled the oil and garlic in and mixed it by hand. I spread it on a cookie sheet and baked at 400. I used purple cauliflower because it was so cool looking at the store! (Unlike most vegetables that lose their unusual color when cooked, the purple got darker when roasted!) Really great! Kids even liked it.

Zucchini Pasta Bake

This was great! I followed some suggestions and did some of my own alterations. I used the full amount of pasta. When I added the zucchini to the cooked onions, I put in 2 c of quartered Sungolds and cherry tomatoes (I had a LOT from my garden). I increased the oregano and basil, skipped the celery flakes and added red pepper flakes instead. Finally, I stirred one c of cottage cheese in with the pasta and veggies. I topped with parmesan (no crackers) and had extra parmesan on the table for those who wished to add a little more. Rave reviews - even from my zucchini-phobic 11 year old!
