Carrot Cake III

This recipe was very dissapointing. After all of the 5 star reviews, I expected the cake to be perfect. Like some of the others, mine rose too high in the pan and then collapsed, leaving a rubbery mess. I followed the recipe exactly, including the pan size, and my oven is completely accurate. I never opened the oven door, and my levening agents are fresh. I wonder if the reason it didn't work out is that unlike the others, I DIDN'T modify ~ I noticed that others who complained about their cake falling also said the followed the recipe exactly as written.

Favorite Corn Bread

This cornbread was excellent! We actually used this recipe to spread it on top of a chille for "tamale pie." The cornbread was perfect! Crispy on the outside, soft and sweet in the middle. I didn't have cornmeal so used polenta instead.

Chicken Biryani, Hyderabadi Style

This recipe is virtually indestructible. I made A LOT of substitutions and still the flavor came out rich, the texture was great, and the presentation beautiful. I didn't have cloves, so I substituted cinnamon. I didn't have whole chicken so I used chicken breast, and to compensate for flavor, used a bullion cube when adding water. I didn't have curry leaves so I used dried curry and I didn't have green peppers so I used one red pepper and cayenne powder. I didn't have any problem with curdling -- used a thick Dutch yogurt. I didn't have jasmine rice so I had to use risotto. I can see that the jasmine would have been better (lighter and fluffier) and that cloves would have been better than cinnamon. But all in all, it still tasted great!

Basic British Scones

I am sorry, but these scones were a real disappointment. I was making these for my boyfriend's birthday breakfast. I followed the recipe exactly, baking for ten minutes at 220 C, and they came out completely raw. I also agree with the other reviewers who said the recipe didn't call for enough sugar. I live in London and am used to scones that are not too sweet, but these were bland and salty.

J.P.'s Big Daddy Biscuits

This recipe is really great. I have made it several times to rave reviews. The key is to spend a long time cutting the shortening into the flour. I've tried it with both butter and crisco, and if you're up for a real treat -- the butter gives the biscuts a wonderful, rich flavor. I roll out the dough a little thicker, so that they will be nice and puffy out of the oven.

Chocolate Chip Banana Bread II

This banana bread is fool-proof. I've made it several times, and it always comes out great. I've also tried it without the chocolate chips, which I actually prefer. They can overpower the banana taste, which is the best part. Definitely a "keeper" recipe.

Easy Pancakes

This is a GREAT recipe. I have used it for months and the pancakes come out tasting great and looking beautiful. The only modification I have made is to mix all of the ingredients, but to beat the eggs separately and add them at the end, being careful to sort of fold them in. Frothy eggs make a pancake with plenty of bubbles so it cooks perfectly. I also add pear or apple compote. My boyfriend and I love them!

San Francisco Sourdough Bread

I have to say I was a little dissapointed with this bread. I am from San Francisco, but am living in Holland so I was really craving some sourdough. I followed the recipe exactly, including the onions, but my loaves turned out with no real sourdough taste. I also had to take the loaves out a full 10 minutes early or they would have been completely overcooked. I think I will try a different sourdough recipe next time.
