Sour Cream Pound Cake

Perfect! Doubled recipe for 2 loaves. Excellent crumb. Added vanilla extract and baked at 350 for just over an hour as per other reviews. This will now replace all of my other pound cake recipes.

Quinoa Tabbouleh

For my first time cooking quinoa I decided to make a tabouleh since my family likes it and it seemed to be an easy substitution. I found the quinoa made the salad lighter and easier to digest than with cousous or bulgur. This recipe was very good. I tend to use more parsley and add mint and a shake of dill to the dressing. I've never used carrots and may give it a try one day.

Apple Pie by Grandma Ople

I've made this with a lattice top and with a full crust top. The consensus in my family is that the lattice tops wins by far--the 'open' baking does something spectacular to the filling that just can't be duplicated with a full crust. Delicious! I add cinnamon to my apples too. Made it once without and it seemed "lacking". Best apple pie recipe by far!

Sophie's Zucchini Bread

Very moist and delicious. The kids loved this and have told me to give this 5 stars. I didn't put walnuts but some chocolate chips in the one loaf. I also used half white and half brown sugar (sorry, I tweaked it).

Watermelon Summer Salad

Delicious! Had to use dried mint because we didn't have fresh. Incredible the way the flavours worked together. Hubby wasn't too partial to the mint, but still liked it. A keeper for sure, thanks.

Chocolate Cheesecake Flan

This is a wonderful recipe for those who like flans and cheesecake. Refreshingly lighter than plain New York Style cheesecake, but a slightly more sensual flavour than a simple flan. I agree that it can be tricky to pop out of the pan.

Greek Lentil Soup (Fakes)

This recipe is spot-on perfect, Diana. And yes, the vinegar is a must. I've occassionally played with this recipe and added celery and/or spinach, and on occassion a shake of paprika to the tomato paste to kick up the flavour a bit. A huge pot doesn't last long in our home!

Easy Rice Pudding

This rice pudding recipe is pretty much just like the one I've been using for many years thanks to an old Homemaker's magazine. However, I use 500 ml of whole milk (half a quart?) and Italian style Arborio rice and cook it over the stove top on low (covered lid and stir occassionally) for about an hour. It thickens more as it cools. I add the vanilla about 5 minutes after it's cooked and sprinkle the cinnamon on top after putting in bowls. I've noticed many egg based recipes and frankly don't feel it necessary to try these as this recipe is tops for ease, taste and creaminess. Just make sure you use the Italian rice. I get tremendous feedback from others with claims that it's creamier and tastier than the Cozy Shack brand. Sometimes I add a dollop of whip cream on top of my bowl for extra indulgence!

Cranberry Pistachio Biscotti

Delicious! I've made two batches, with and without the pistachios. The only thing I changed was omit the almond extract and add about 2 teaspoons of grated orange rind. This is the first biscotti recipe I've seen and tried that uses olive oil rather than butter. By far the best biscotti recipe I've tried. (Tip-let loaf cool a bit before slicing and don't use a serrated knife or it'll crumble. I use my very sharp Santoku for perfectly thin slices every time)

Spicy Baked Sweet Potato Fries

I made these with a mixture of seasoning salt and a few dashes of cayenne. Lower temp. oven reduces the chance of burning, especially if your fries are on the thinner side. Hubby is now a sweet potato fan! Can't make enough batches for the family. I'm so glad I gave this a try.

Beet Bundt Cake

Impressive. I "glazed" it with melted chocolate. Very rich and tasty. Don't let the burgundy/purple batter scare you, it really does come out a very nice dark brown just like the photo.

Easy Ice Cream Cake

My coworker made this for a potluck last week. She used crushed Skor bars in the layers. Cutting it up, you would never know that this was made with ice cream sandwich bars. The layers looked great and it tasted spectacular. The cake stood up to being in room temperature during the party and didn't melt for quite a while.

Spicy Baked Feta (Feta Psiti)

We've made this delicious feta recipe numerous times and more recently on the BBQ (on aluminum foil with the sides crimped up to catch drips). We discovered that we needed lots of chili pepper flakes when using the "stale" stuff from the Bulk Barn. Just the other day with friends, I crushed up some dried chilis I stored in a jar from last year's garden, and boy oh boy, what an amazing flavour! We BBQ'd 2 large 1/4 inch slabs and ate them with garlic buttered toasted pitas and everyone including kids was ranting and raving over the flavour. So simple and so good.

Apple Dip

I tried a recipe similar to this at work but with an excellent twist: the dip was spread thinly on a plate and melted caramel was spread thinly over the top. It was sprinkled with broken/crushed Skor bars that were slightly pressed down into the caramel. Absolutely heavenly!

Ali's Greek Tortellini Salad

We love this. I've made it with many variations, and usually without eggs. I've added mixed beans and green onions a few times without spinach. You can really play with the basic recipe. Letting it sit in the fridge for a few hours is the key in addition to not overcooking the pasta.(mushy tortellini isn't very palatable)

Zucchini Cobbler

Fooled a few people with this in the past. I don't always measure my ingredients perfectly and have had this come out as squares rather than in a cobbler form. Just make sure you cut up the zucchini small and simmer well with the lemon juice until softened.

Balsamic Strawberries

I'm giving this 4 stars because it has a lighter more delicate yet "proper" strawberry taste without the butter. Just let the cut strawberries marinate in the balsamic vinegar long enough (few hours). We like it with vanilla yogurt.

Chocolate Crinkles III

We were hoping for a stronger chocolate flavour. These were too mild, hence the lower rating. Ours didn't flatten out, as we were expecting. We're glad we didn't have any sticky problems. They were very pretty though so I will try making them again...perhaps a different recipe next time.

Coconut Shrimp I

Very good. One of the better coconut shrimp recipes we've tried. I still crave for the coconut shrimp that I had in Miami at Don Shula's All Star Cafe. Now THAT's a recipe I want to find!
