Simple Baked Apples

Reviewed: Jul. 31, 2013
It was too dry! Also, the ingredients didn't distribute evening. I didn't read the reviews before I baked this, so that was my mistake. Next time I'll do as other users suggested by mixing the dry in a bag and shaking it or fixing the wet and dry ingredients then pouring it over the apple and covering the dish so it won't get dry.

Scallops One - Two - Three

Reviewed: Jul. 30, 2013
Thanks for sharing this recipe it was my inspiration for dinner. First, I added seasoning (lemon pepper, dill, garlic, sea salt) to the scallops before wrapping them in turkey bacon. Second, I added a couple of teaspoons of fake butter with 1 chopped garlic clove to the oven tray and cooked them for 10 minutes. Then, I added the lemon juice, 1 small tomato (dice in small bites, including the juice) and 1/2 very ripe bell better into the tray and put it back in the over for 10 more minutes. Last, I served everything over pain whole wheat pasta (one tablespoon of lemon flavored extra virgin olive oil to the cooked pasta, so it wouldn't stick). Voila, simple, delicious healthy dinner in 30 minutes! *I wanted to use ingredients I had in the refrigerator before they spoiled so, but any left over veggies would work as long as they are ripe so it cooks fast.

Hearty Vegetable Lasagna

Reviewed: Jun. 26, 2011
Thank you this was an excellent base for a tasty meal. As others rec'd I added a mix of veggies I had: Spinach, 2 bell peppers (yellow and red), 1 zucchini, 1 yellow squash, 1/2 med eggplant. Changed rep: doubled the garlic, 1 cup of fresh basil, used olive oil, 1/2 cup of fresh parsley, and lastly 1 1/2 cups of parmesan cheese on top. I was concerned about the sodium so I only used 1 jar of pasta sauce and added 1 box (pt I think) of cherry tomatoes cut in half and 1 small 100 natural tomato sauce can (5 oz). I grilled all my veggies separate (left the bell a bit peppers churchy) and layered them.

Fantastic Lemon Butter Fillet

Reviewed: May 9, 2010
Thanks. As other reviewers suggested I used 1/2-1/4 of the salt, 1/3 of the lemon pepper and 1/3 of the butter recommended. To cut the calories I used a butter spray and a little bit more fresh lemon. I also sprinkled some bread crumbs (made from a mix of standard 1/3 white bread crumbs and 2/3 fiber one cereal I made in advance for recipes that call for breading) and a little parmesan cheese. The bread crumbs and cheese were sprinkled on the fish not completely covered. Based on other suggestions I also cooked the fish an extra 5 minutes and uncovered for the last 10 minutes. It turned out very tender and moist.

Butternut Squash and Turkey Chili

Reviewed: Jul. 5, 2009
I was looking for a recipe to use my left over Butternut Squash (already made/store bought) soup from a month ago. I did not add the tomato sauces as per people's suggestion and added extra onion, garlic, cumin and added 3 bell peppers. It taste excellent. I gave it 4 out of 4 stars, because I did not make the recipe as instructed. Will make this again. Thanks. (Store bought soup, I mentioned above, is Pacific Organic http://www.pacificfoods.com/our-foods/creamy-soups/organic-creamy-butternut-squash-all-natural-soup)

Authentic Mexican Tortillas

Reviewed: Feb. 22, 2009
Thanks! I substituted 2/3 the flour for whole wheat flour. Tortillas are a bit tricky, I made this recipe 3-4 times before I got it right. Completely worth it!

Salmon Chowder

Reviewed: Feb. 22, 2009
Thanks! I did as others suggested and omitted the carrots and salt. I used fresh salmon (baked first), dill and garlic and 1/3 of the cheese in the recipe. I also blended ingredients for after they were simmered with the salmon, cream of corn and evaporated milk. Then returned them the stove and added the cheese.

Mexican Whole Wheat Flour Tortillas

Reviewed: Jan. 16, 2007
Thank-you, thank-you! My family cooks and measures the same way "a little of that... a pinch of that," etc. Made it extremely difficult for me to perfect my family's tortilla recipe. I was very happy so see your measurements for the ingredients, I had been experimenting for a few months. The only thing I would add is ½ teaspoon of baking soda. Don’t forget to follow the instructions. Mix the shorting with the dry ingredients well and make sure the mixture is consistent before adding the water. I recommend adding ½ of the water first and knead it a little bit, then add the remaining water and knead again. I tried this recipe twice, the first time I was lazy and put all the ingredients in at the same time and paid for it when my tortillas came out hard. The second time with a little patience-- they were perfect. For those of you who have to try this more than once, it’s normal-- flour tortillas are tricky. You might want to start by making 6 (1/3 of the recipe). In step three she uses the word “fry”, but it doesn’t mean use oil, she means cook it by putting on a frying pan (best if it’s a non-stick pan) or a skillet. Good luck!
