Moist Chocolate Muffins

Pretty good. Hubby liked 'em. Easy to make, which I always like. :) I used the recipe as printed rather than the video. Perhaps a little salt may have added to the flavor.

Caramel Brownies III

Pretty good! I used Duncan Hines Chocolate Fudge cake mix and reduced the butter to 1/2 cup. I couldn't crumble the mixture over the top, so I took little pieces of the dough, flattened them in my hand, and placed them evenly on the caramel layer. If you have arthritis, this is not the recipe for you. My hands got tired unwrapping all the caramels! :D

Cinnamon Stars

Mine are more lemony than cinnamon. I used the ground almond from the Bulk Barn and found the dough to be a little crumbly rather than gooey, almost like pie crust (but not greasy). However, it worked well. I was afraid of overbaking, so I may have under baked, but mine came out a bit chewy. They're definitely tasty!

Peppermint Cookies

Very yummy. I find it hard to crush candy canes, though, so my pieces were probably bigger than they should have been. This led to them sticking to my baking sheet, tearing them as they came off the sheet. :( I will try baking them on parchment paper; it may help with this. Also, the candy kept falling off the cookies after adding them to the baked cookie, so I had to push them in a bit.

Favorite Fish Chowder

Very good! My first time ever making this. I did 1/4 of the recipe, doubled the fish (that is what I had on hand), and used 2 Tbsp of milk powder with the 3/4 cup of milk to substitute for the 3/4 cup evaporated milk. I found it a bit too peppery, but that might just be due to measuring error. :) I would make this again.

Chocolate Crackle Cookies

No matter what I tried, I couldn't get the pretty white crinkling effect to the extent as shown in the photo. :( I subbed 1/2 cup cocoa for 1/2 cup flour, but should've added the extra flour anyway. They were very mousse-like, like another reviewer said, and hard to roll in the granulated and then powdered sugar. Next time I'll use more flour; maybe that'll help with the crinkle look. Flavor (with the extra cocoa) was very good. I am rating this on what I expect the original recipe would have been without the cocoa. I think it needs the extra chocolate flavor - I'd rate it a 4 if it had that as well.

Oatmeal Peanut Butter Cookies

Very yummy and easy! I like not having to press them down with a fork. Next time I'll cut out the additional salt; for me, there's enough salt in the regular store peanut butter.

Fluffy Banana Cake

VERY yummy! It's the fluffiest banana bread/cake I've been able to make - most of mine are very dense. This isn't as light as, say, a boxed cake, but for a "from scratch" recipe, it's quite light. (I made it per directions except added 1 more banana and used a 9x13 pan. Also just plopped whipped cream on top instead of frosting with it.)

BBQ Cola Meatballs

This was okay. I couldn't taste the cola (although I added more than the recipe called for) - maybe I added too much black pepper, since it seemed to have a decent amount of heat to it and wasn't very sweet. No green pepper, about 1.75 cups of cola, and about 1/2 the vinegar as per the other reviews. Assembled the sauce and cooked it down for a good hour at a fast simmer, broiled the meatballs and added them to the sauce, simmering for about 30 minutes. Served over rice.

Cake Mix Cinnamon Rolls

I ended up using much more than 4.5 cups of flour - maybe closer to 5.5 cups. That means I had a LOT of dough. Maybe I'll use less water next time. I didn't give it much time to rise, but they still were fairly light. I liked the flavor, but hubby and I think they need more cinnamon sugar. Maybe we just ate the end pieces and thus didn't get much. ;) I will make again, maybe with a couple modifications.

Red Potato Salad

VERY yummy! I didn't quite measure my onion (used Vidalia) and chives, but I think I was close to the amount called for but maybe a little more. I did use about 2 slices of bacon, maybe more. Made it Friday, ate it Sunday. I loved it! Father-in-law said it tasted like potato salad - I guess that's a good endorsement.

Baked Teriyaki Chicken

Wonderful recipe! I made it as written except used 1/2 tsp garlic powder since I didn't have any fresh. I also covered to bake until the end. Very flavorful! I didn't find it very sweet, but sweet enough. Served over rice with carrots on the side.

Egg Noodles

Excellent! I halved the recipe and used about 1/2 cup whole wheat flour, 3/4 cup all-purpose flour (the equivalent of 1 cup whole wheat, 1 1/2 cups regular for the full recipe). It worked very well! I also did what others said and rolled up the pasta to cut it. However, I didn't have enough flour on it; some of my rolls stuck together too much to unroll, so I had to redo them. Be sure to use enough flour when using that method. ;) I served them tossed with butter, garlic, parsley, and Parmesan. Wonderful!
