Ethiopian Cabbage Dish

Exceeded my expectations! Doubled the tumeric and added 3 cloves garlic. Also threw in some beer because it started sticking to the bottom. Served with Spice rubbed pork chops and sauteed apples. Thank you!!

Crunchy Apple Muffins

These turned out better than expected! The batter was so thick (I had to add a splash more milk) I thought they would be dense. Not the case; they are light and crumbly and yummy! The changes I made were: doubled the cinnamon and added 1/4 tsp ground ginger, added about 1/4 cup more apple bits and made a cinnamon-sugar ground almond topping. Very nice! Will make again!

Tasty Lentil Tacos

Awesome! I didn't even miss the meat. I added the spices with the onions and cooked for about 5 minutes before adding the garlic and other ingredients. I also added extra spices and a can of green chilies. Excellent!

Chickpea Cauliflower Curry

3 stars for quick and easy but the end result was pretty bland. I added a diced jalepeno and some basil and it still wasn't enough. I like the idea so I'll mess around with it and see if I can get a better tasting cauliflower curry next time.

Zucchini-Chocolate Chip Muffins

Really nice. Perfect homemade snack for my three little kids. A couple changes I made: Used white whole wheat flour, used 1/4 cup canola oil and 1/4 applesauce and used regular choco chips because it's what I had on hand. I will make these again!

Carrot Oatmeal Muffins

These really hit the spot. My kids are eating them up quick! The only differences in my batch of muffins is: I used all white whole wheat, I cut back a little on the sugar, I used applesauce instead of pinneapple (only cause I didn't have any) and I blended the cream cheese with orange juice. YUMMMMMM!

Coconut Almond Cookies

I can't stop eating these cookies! So delicious! I gave 4 stars because I will make small changes to the next batch. A little less butter and sugar and another egg instead of the water? Also, they cook better at 375 degrees. I like the idea of dipping half the cookie in chocolate then dipping that in chopped almonds. YUM!

Brown Sugar Instant Oatmeal Muffins

Needs more flavor and sweetness but my kids really loved it and it was fun to make. Very convenient using packets of oatmeal. The topping is really good. It needs at least double the sugar and the addition of vanilla and/or maple and cinnamon.

Blueberry Cornmeal Muffins

Incredible! This is the first time I made blueberry cornmeal muffins and these are fantastic! I used half brown sugar, half white sugar. Also, I added half a banana that would have been thrown away and sprinkled cinnamon sugar on the tops before I baked them. This recipe is a keeper!!!
