Spicy Mango Sweet Potato Chicken

My whole family enjoyed this one, however, the sauce is very flavorful which sometimes is good but we felt it over powered the flavors of everything else in this dish.

Fresh Broccoli Salad

So yummy! Out of personal preference I use dried cranberries and roasted sunflower seeds. I alternate between white wine vinegar and red wine vinegar. Delicious either way.

Sausage Egg Squares

Made this for Thanksgiving brunch and everyone loved it. I only had a few ounces of maple sausage so I added that and a pound of cooked, crumbled bacon. It was a hit.

Szechwan Shrimp

Not so sure we liked this with shrimp but the flavoring was still incredible. My DH soaked up the remaining sauce with some bread. Will definitly make again but maybe with chicken, beef or pork.

Angela's Awesome Enchiladas

These are so good! I follow the recipe exactly as written. My DH who doesnt care for enchiladas thinks these are incredible and my two teenagers cant get enough of them. They are in our monthly meal rotation. Thanks for a great recipe!

Garlic Corn on the Cob

My DS liked corn on better this way than just boiling it, however, my DD likes it better boiled. I liked for something different since I had the grill on anyways. Next time I'll add a bit more butter, salt, and garlic.

Blueberry Zucchini Bread

This was so good! I made a few small changes/additions. I used 1/2 cup oil & 1/2 cup applesauce, used frozen blueberries instead of fresh because its all I had and I added a crumb topping before baking. I may add a little more shredded zucchini next time as I could hardly tell there was any in the bread. It was delicious and I plan on making it with all my extra zucchini from the garden.

Zucchini Herb Casserole

OMG! I think this is soooo good! I couldnt stop eating it so I finally had to put it away :-) I'm a firm believer of trying the recipe "as is" first, then I'll try again and tweak it if necessary. The 2nd time I made this I tweaked it a bit. I tripled the spices except the oregano and added about a 1/2 tsp. of chicken bouillon. I also increased the rice to 1/2 cup which I boiled in 1 cup of water. I have a lot of squash coming out of the garden so I plan on making this often. Adding chicken and/or shrimp would be delicious. Cant wait until next time to make this =)
